It is a…read morebeautiful location which Skipperhuset (The Skipper's House) tries to equal with with ambitious and expensive four-course tasting menu. The four courses are tiny portions of lovingly prepared delicacies. They were great but like many upscale Danish restaurants about 10 degrees too precious. The service was cheerful and enthusiastic, but spotty. The wait staff appeared to be local kids, not professional waiters. In fact one of may Danish friends who lives nearby told me her son had worked at Skipperhuset when he was in high school. Bur -- and this is a big but -- the location is one of the best in the world. The sun sets very late in the Danish summer, and it out on a spectacular show while we were eating. And we were with very dear Danish friends and it made for a spectacular evening. When the weather is nice, all of the tables are on the terrace bordering the lake. There is a small interior space which I imagine is used during inclement weather and during the winter. There is also a boat shed set up with a long single table which is used for fancy, lunches for special occasions. One note of caution. Our GPS kept sending us down a driveway in Fredensborg (near the castle) rather than down the road that goes down to the lake. And a culinary question for people knowledgeable about Danish cuisine. After a month in Denmark this past summer, it seems to me that there are four kinds of restaurants, no matter where you travel in the country. 1. Fast food 2. Foreign restaurants -- Italian, Chinese, Middle Eastern, etc. 3. Traditional Danish cuisine -- smørrebrød for lunch, flæskesteg or rødspætte for dinner - although it may be prepared better or worse depending on the restaurant. 4. Upscale Noma-like tasting menus, which are very expensive bits of exquisite food which has been fussed over by chefs trying to get a Michelin star. So here's the question: is there nothing between 3 and 4? Is there no bistro or brasserie where one can find excellent food in portions larger than the cupped Epalm of your hand? Without a four course tasting menu? That costs less than US$100 per person? If so, please let me know.

    What an amazing dinner by the coast after a day at the office. Small-ish plates that are…read morethoughtfully prepared and artfully styled, but not fussy, not pretentious, and not hipster. All in all a meal I shall not soon forget. Food: Recommended to choose 3-5 courses per person at 130 Kr. each; I chose 4, but 3 actually may have been enough. My four courses: 1. Tartare of Norwegian lobster with walnuts & crispy lobster 2. Cod with egg yolk, cress & sauce with marrow 3. Roasted halibut with snails glazed in garlic, potatoes & bisque 4. Crisp sweetbread with pumpkin, chanterelles & chicken sauce There were lovely aspects to each dish, but the cod with egg yolk was absolutely one of the top five dishes of my life. Never thought I would feel that way about cod, but you have to experience the smells and textures of this dish to understand. The marrow was smoked, the yolk was spherified, and the cod was the perfect temperature. I could go on and on about each dish, describing how well these plates were put together, but it's really just best to go and have the experience (but I will say that the crispy lobster will blow your mind). Choose wines, beer, or cocktails to go with your dinner. You can have a lot of fun with pairings here. Service: Impeccable. Vibe: Seaside-modern-easy-chic. Young and hip staff wearing black with brown leather aprons who are knowledgeable about the wines and the food. This is absolutely my kinda place. We sat in the sun room surrounded by windows and it was the perfect place to enjoy the evening. Family-friendly: No way I would bring children here. It may be just fine to do so in Denmark, but I would rather save this type of experience for me and my missus. Summary: Restaurant Sletten represents all that is right these days in the food scene. And I guess I mean that it's so much more about the food than the scene. Well-intentioned flavor combinations that really work. I generally hesitate to use words like "well-balanced," because it's an over-used term that describes a situation that can be very hard to achieve. But Sletten absolutely achieves it in every sense. I am grateful to have had the opportunity to dine here.

The food is spectacular and the setting is a lovely little restaurant on the water with great views. The small plates make it possible to try many options and every one was a winner. It's pricy but for this level of innovative and exciting food it's worth it.
