Months and months after our trip, she raved about this epicurean delights - inspired by his time in Tuscany, his upbringing in New Orleans, and whatever is seasonal in Telluride - chosen with love and profound attention to detail for children and parents alike to enjoy. Chef Patrick is full of surprises, offering dishes that grab all of your senses. He wonderfully pairs his creations with delicious wines from around the world as he showers his audience with the most intriguing and entertaining stories told in authentic Louisiana style fashioned for levity. By the end of the evening (or the week if you are like my family), Chef Patrick will have exceeded all of your expectations. A Telluride experience is incomplete without Chef Patrick Laguens.

After waiting for HOURS on thanksgiving and weird vague phone calls, he had random Chinese food delivered to our house that gave us all food poisoning. He showed up the next day with all store bought food (that he claimed he cooked from scratch.) For the price that was paid, this was completely unacceptable. The kitchen was left completely dirty and destroyed. He did not cook a single thing on the menu that we had given. He was wasted and left all of his shooters behind, along with all the packing of store bought goods that he came out and told us he made from scratch. Complete joke and a waste of your money. He also never sent back the deposit or any money and totally ruined our family Thanksgiving.

We were playing cards when he arrived and he actively chatted about games with us all the while preparing our food from scratch in our kitchen. He never missed a beat. I really appreciated his ability to just fit into our space. It made everyone comfortable and excited about the meal. Chef Bud is clearly an expert in his field. He flawlessly explained all the recipes, going so far to even tell us where the cheeses or meats originated from. He accommodated allergies we had (dairy and fish). Prior to coming to our house, he provided wine recommendations that would pair well with our menu selections. Each meal was visually mouthwatering and while he has many entrees to pick from, clearly his beef tenderloin is a 5 star Michelin entree! We just couldn't get enough!!! When I went on and on about the leeks he offered the recipe to me. I especially appreciated that. He was polite and cheerful through the whole experience and visited with us like we were family. But make no mistake, he clearly has skills and knows his way around in the kitchen. He and Hazel clearly have a routine setting up, preparing and cleaning up everything; they even started the dish washer. I would highly recommend Chef Bud for any occasion! You will not be disappointed!!!

Backcountry Catering - Charcuterie board by Chef Jeff.

Backcountry Catering

Holy moly melted matzo balls, these folks are on point…read more I have bartended and served at many weddings spanning the better part of a decade. As an employee of the Harvard Club in Boston (yeah the club is in Boston not Cambridge- weird I know) and Guastavino's in Manhattan, I've learned that 90% or more of what wedding guests are served is commercially prepared frozen food. Backcountry Catering proved to me there's a better way. Last week I got the chance to meet the proprietors of Backcountry Catering, Stef and Jeff, at their commercial kitchen in Norwood and prep for a party of 200 guests. Sure mashing potatoes isn't a glamorous job, but watching these masters at work was a sight to behold. What stood out to me the most was witnessing them painstakingly prep everything from chives to grilling the mains for days on end. While their own wedding is just weeks away they treated this event as if it was their own; putting their own needs on the back burner. When we finally did break for dinner at 9:30 pm, my taste buds were treated to ravioli served with a sage brown butter sauce that was to die for. Each station is held to a higher standard in the kitchen than I have ever witnessed in any commercial kitchen. Germaphobes rejoice, they are as particular as you! Their mobile kitchen is awe-inspiring- including a wood-fired Chicago brick pizza oven, an Ole Hickory CTO smoker, two commercial deep fryers, a 36-inch flat top griddle, a 24-inch charbroiler, a 6 burner stove and oven, and a customizable 50-inch full digital display. As a perpetually hungry person, I've seen a lot of food trucks and mobile kitchens over the years- none of them hold a candle to this bad boy. Chef Jeff has also won the title of Telluride's Top Chef four years in a row. I think it's safe to say you need to look no further than Backcountry catering for your next event.
