Such an awesome place for fresh seafood!!! We come here each time we come to stay at Harstine island! Oysters are always fresh, service is great and they can recommend condiments too. Gooey duck is also sold here, nice and fresh

    Oysters + chowder, round 1

We came here on our way down to Canon Beach but it was basically highlight of our trip! Shelton is Taylor Shellfish Farms HQ, but it's really low-key. If you're here for oysters, they'll lend you an oyster knife and you can shuck them outside at their picnic tables. We tried the medium & small Pacific oysters, Shigokus, Kumamotos, and Olympias. The Pacifics were my favorite simply because they were more substantial, but everything was delicious and fresh. If I didn't have to shuck oysters, I'd happily slurp down a few more sweet Kumamotos. We also had a bowl of their smoked salmon chowder. We also got a 6 pounds of fresh clams and a pound of frozen geoduck for later on. The frozen geoduck was a real treat, since it was already prepped and when we thawed it, we ate it sashimi style to no complaints The gal who helped us in the store and pick out our oysters was a total gem. She was so patient, kind, friendly, and generous; my mom referred to her as an angel when we left.

We were visiting a friend and our love of oysters brought us here. The young lady at the counter was so helpful and friendly. She gave us lots of tips and asked if we wanted our shellfish on ice since we were bringing them back. I bought a dozen x-sm and few sm oysters, some great peri peri sauce and smoked oysters. They have a variety of raw, smoked and shelled oysters plus several other seafood offerings, clams, geoduck, etc. But the star the star were the oysters, so good! I had them raw just to make sure and it was superb! Grilled is also excellent. I would definitely stop here again for a briny treat.

I first discovered Taylor Shellfish farms in Seattle and loved their oysters, so I was super happy to discover that there is a closer market location near me in Shelton! I picked up a dozen Kumamotos and a dozen Shigoku and they were super fresh and delicious. I also grabbed a bottle of their mignonette which paired perfectly with them! The service was excellent! I am definitely going to come back. 10/10 make sure to stop by and pick up some fresh oysters!

We went to Taylor's for oysters on the 1/2 shell and weren't disappointed. We bought the mignonette and it was very delicious as well. As always, Taylor's is highly recommended

Virginica East Coast oyster in the Totten Inlet, South Puget Sound. $16/dozen

Bottom Line: If you want to slurp the best East Coast oyster on earth, come to the South Puget Sound, WA. Meet Virginica, ain't she beautiful. Ha ha I love the Viginica's from Taylor Shellfish (TS). It's an east coast species and Taylor Shellfish is the only farm growing them on the West Coast that I know of. Being a West Coaster, I eat predominantly Pacifics, Kumamotos, and sometimes Olympia's and I love them all. The are 3 things which make these the best pairing with a Kumamoto, Shigoku or Extra Small Pacific. 1. Size Matters: this is a sizable oyster and is a nice contrast to the smaller Pacific Oyster variants. 2. Hold the Salt: the liquor is a little less briney than the some Pacifics. 3. A Delicate Chew: I love a big chewy Pacific but the Virginica is like a fillet Mignon. The Shigoku is the showcase oyster for TS, but the Virginica is my favorite to contrast a Kumamoto. So why a 4/5 rating and not a 5/5? First, the cost, $16/dozen is pricey for buying oysters at the farm and the Kumamotos were even more. Second, the service wasn't very good. "I would rather be somewhere else". Too bad, because the other staff from TS I have met were awesome. All that said, Virginica, ain't she beautiful. Check it out.

The processing plant is in Shelton WA. I am so glad we made a stop here and not skipped it on our road trip to the Olympic National Park. Such a gem. I remember paying $3-$6 an oyster when I went to Taylor Shellfish restaurant in LA and looking the the price here between $1-$2, my jaw dropped. We snapped up a lot of oysters. I would saw it was close to two dozen for the two of us. We also ordered the geoduck chowder, which was okay. The oysters were the highlight as it was so fresh. I think I went to Nirvana that day for a brief moment! The only thing is that they no longer shuck them for you if you want to dine at their small lawn next to the seafood shack. Most of the items sold here are ideally to go, but no worries. The people who worked there was so friendly, they gave us a shucking 101 lesson and send us off with the tools. What an experience and we were lucky the weather held up for us. It's pretty wet and dreary in the Pacific NW at the end of June. We tasted the ocean in those oysters and that made our trip felt so fruitful. Wished we lived closer and could get there again sometime soon.

Happiness is... seeing the ones you love enjoying the food they love . * One thing my pops wanted while visiting was to eat fresh oysters and of course @taylorshellfish is a 100% go to! For a long time I thought the Chuckanut location was the original farm but I realized while doing research, that their actual farm and where they distribute the oysters they harvest is in Shelton near Hood Canal. It's actually about the same amount of travel time too! * The Shelton location has their warehouses and in the front is a small market. They have shucked oysters in containers and mussels, clams, and various types of oysters in the shell for purchase. If you wish to eat it there instead of buying it wholesale, they put the oysters on ice and provide you with a shucker to borrow. If you need a tutorial on shucking, the people at the register are kind enough to show you and provide a sheet with pictures as well. After shucking a few, it's much easier than I thought it'd be. We enjoyed shucking and the experience so much we bought two shuckers engraved with @taylorshellfish (one for me and one for my dad) to take home for whenever we shuck in the future ! * We initially ordered a half dozen freshly harvested Shikoku and Kumamoto oysters and then ordered another dozen of Kumamotos because they were that good. Not only are the oysters fresh and have that unparalleled crisp taste of the ocean, but it feels extra satisfying shucking your own . If you want to go to their OG location, check out @taylorshellfish in Shelton .

When my wife and I moved to Washington, we were excited about tasting some great seafood. I had only heard of the quality of seafood here and never tasted it. Quality seafood requires freshness and it can't be fresh if it travels 1,000 miles. So far, I can't say that I have been blown away by the quality of seafood here more than elsewhere but the northwest sure wins in terms of variety. Oysters are popular here and I have not yet developed a full appreciation for them. We find seafood shops like Taylor shellfish on our adventures around the northwest and they tend to have many different types of fish, clams, crabs that are cooked and smoked a variety of ways. Even the local grocery stores have multiple types of salmon, fileted, and whole, and from different regions of Washington. Note to anyone looking to buy a whole salmon on the cheap: filleting salmon is more difficult than most fish because they have an extra layer or two of bones. My first experience filleting a whole salmon was a learning experience. Hopefully, my next one will be better. My wife and I purchased fresh oysters and smoked oysters from Taylor shellfish farms. The quality of the fresh oysters looked great but my baked oysters cooking method still needs some refining. The smoked oysters were flavorful with a nice texture, unlike my wet baked ones. If you want a quick taste of the local oysters, buy smoked.

Oysters for here. Picnic tables outside. ~$1.30 each. Good.

I love Taylor shellfish in Cap Hill so when this market was on the way between Seattle and Portland we had to stop by. It is about 15 mins freeway west from Olympia. Would not come just for this, but if it's only a quick detour then yes! The shop is pretty tiny and was pretty quiet around late afternoon on a Monday. We picked up a couple jars of shucked oysters. $9 a jar for any size. $21 for same size but Kumamoto oysters. The lady wrapped it up in a bag with ice too so that was nice for the commute in the summer! We also had some on site. There are a couple picnic tables outside where you can have them. Each oyster was only around $1.30 which it's about $1 more each at their retail shops in Seattle. Great deals. Though I do think they take more care in shucking them at the shops. The ones we had more bits of stuff in it (rocks?). For the price and quality of oysters though, totally worth it. We had Shigoku and Virginica that day. They also serve a geoduck or oyster stew. Doesn't seem that fresh or is sitting all day though. However my boyfriend really enjoyed the oyster stew. It's almost just all oyster in a very buttery sauce.

The food is fresh, the portions generous, the staff friendly and with a vibe that often has us talking to our neighbors. We prefer the simple dishes that highlight the seafood. Prawns, crab, muscles, class steamed or as a cocktail. The dungeness crab bisque is great with lots of fresh dungeness. Thier seafood Louis trio is simple too much food for me. The prices are not cheep but reasonable for the quality and quantity. My only criticisms are meant to be constructive. The fact that they only open before 4 on the weekends is a bummer. Likewise, I do not understand why they do not have halibut and razor clams. Perhaps it is political, but I find it sad I have to go to Taylor Junction to get razor class. Halibut would be well suited for thier simple steaming techniques, and razor slams for the fried foods like prawns and cod.
