When your food is served, they take great care to make sure an even and perfect proportion of meat, vegetables, noodles, and sauce is given to each customer, and they ladle your food onto your plate with such care and love. This is perfect and must not change - it is what makes this place so special; however, I must warn you, eating here is a test of patience.* And I'm not talking about American fast-food patience - I know many French who have given up on the wait, but it is worth it. At the end of our meal, the wonderful owner told us with pride that she had been in business with her husband running the restaurant for 21 years!!!
