Think of it like a BBQ place that serves only pulled and chopped pork. Outside there are large pots with the fried pork. You can choose whole pieces or mixed' like pulled pork'. A second vat has pieces of skin and chitlins. Take a platter and you can pick and choose what you want, the pieces and the quantity. Pro tip - make sure they dunk it or pour over juice for moister pork. You then take it inside, hand it to the counterman who weighs and , if desired, chops up the order.
