I was talking about getting my kitchen knives sharpened. Perv. ---- Incredibly affordable cost-per-inch of sleek, sexy steel is only one facet of the brilliance of The Japanese Knife Company. I wonder if this might be their flagship store (of three or four outlets), as it's notably larger than the Soho location. Similar to its sister shop, stunningly beautiful cutting implements are displayed in prominent glass cases, and it's the first time I've seen their attention-grabbing magnetic wood knife blocks in person. Whether you just need the aid of a proper whetstone for a blunted edge or you're looking to make a serious investment in some new kitchen equipment, a visit here is likely to make you crave a utensil upgrade in your life!

I told them that I would wait for them at JKC as I had been wanting to visit the shop for ages. They changed their minds and decided to walk into the store with me, while the husband tried to argue "a knife is a knife is a knife" Within 5 minutes of entering the shop, he was eating his words. Jai gave us such an amazing demonstration, from onions that didn't make our eyes cry (because of the sharpness of the blade) to slicing tomato slivers that we didn't think could get any thinner. We spent 2 hours at the shop while he demonstrated different knives and gave us backgrounds on the families who forge some of these knives. It was very well done and did not feel like hard sell at all. Some of the knives are works of art. 128 layers of steel pressed to less than a millimetre! And then the carving on some of them. Absolutely beautiful. There's a section downstairs with beautiful handles specifically for carving roasts at the table. They have these very interesting water sharpeners and cases for your knives. I ended up picking a multi purpose knife that works for everything except frozen meat and butchery (both of which I don't do) They even printed my name on it in a couple of minutes. I have to go back to pick up my knife, because I was worried it would get confiscated at museum security. Can't wait to start using it!
