But a great bar is original and complete unto itself. Second, good booze overall, and something special. Not every bar can have great beer and great wine _and_ great spirits, but as long as you do one excellently and the others decently, that's enough. Lastly, good service. This doesn't necessarily mean you have to kowtow to ever tosser who rolls in and demands a glass, but it means that you make your custom feel welcome and offer them just a little extra, whether it's a chat or a bite to eat or even, the holiest of holies, one on the house. Go to Le Shamrock, have some rum "d'arrange" (infused rum), chat with the owners, prop up the bar, settle in, and enjoy. See what a great bar looks like. De la Coreff, bière bretonne, à la Sainte Colombe (bière d'Ille et Vilaine) en passant par la Guinness et la Kilkenny la carte des bières est presque aussi étoffée que celle des whiskies qui en compte plus de quarante. C'est peut être la raison pour laquelle les îliens de l'autre côté de la Manche, en ont fait leur pub préféré de la côte d'émeraude.

And here's the kicker, it was only a bottle of Fischer d'Alsace Amber. Gods know the lengths he would go to for a trappist ale or a McChouffe bruin. Did I mention that they have both of the latter on draft? They do, and a half-dozen excellent others besides. This is a cool bar, and not just any cool, but French cool, which means mellow, musical and very relaxed. The location is also excellent, right in the heart of the walled town.
