But a great bar is original and complete unto itself. Second, good booze overall, and something special. Not every bar can have great beer and great wine _and_ great spirits, but as long as you do one excellently and the others decently, that's enough. Lastly, good service. This doesn't necessarily mean you have to kowtow to ever tosser who rolls in and demands a glass, but it means that you make your custom feel welcome and offer them just a little extra, whether it's a chat or a bite to eat or even, the holiest of holies, one on the house.
Go to Le Shamrock, have some rum "d'arrange" (infused rum), chat with the owners, prop up the bar, settle in, and enjoy. See what a great bar looks like. You will never set foot in a Wetherspoons again.
