When I was newly-diagnosed as diabetic, I struggled with balancing my food intake with the dietary requirements of someone with a serious problem with sugar. My doctor's and mom's opinion was that I had to cut back on processed carbs, sweets, and anything salty; my opinion was that anything that followed those is essentially chopped cardboard.
Mom, however, persisted. Off we went to Power Plant Mall, to introduce me to the concept of tasty AND healthy eating. I was, as a fat kid is wont to do the very first time he's separated from his fast food and whatnot, was close to hysterics. Kidding. Our first stop was, of course, the deli attached to the grocery. I said "oh, what the hell, why not, I'm already here", and ordered a Mediterranean chickpea soup. It opened my eyes.
This was the very first time that I tasted soup WITHOUT any sort of meat in it, not even stock, if I recall that one batch. It was all just the clean, robust taste of vegetables, underscored by the chickpea. Precious little salt. No MSG. All natural flavors. I was hooked. I even made my own version of it later on.
