    Matera is definitely an up and coming town. We can see why the city recently received a ton of funding to increase tourism, so i imagine that SOUL KITCHEN will be a hot spot! My husband and I didn't have a reservation, but because we arrived at opening time-- they managed to find a spot for us. We are so glad we found this adorable restaurant. It had good ambiance, delicious food,and friendly staff. I ordered the roasted wheat orecchiette pasta with turnip greens and sun dried pepper oil, garlic, anchovies. The pasta dish was fresh and packed with flavor. The turnip greens tasted more like broccoli rabe, which I enjoyed. My husband really enjoyed the potato ravioli with tomato sauce. The beef tagliata and tbone steak were cooked as requested. We have never had beef tagliata and it was quite tasty. The t-bone steak was massive, flavorful, and seasoned well. The house wine was delicious too! The staff was professional and efficient. If we ever find ourselves back in Matera, we will definitely be back.

    Trust the chef! The chef comes to your table and you place your order with him. Ask him what he recommends and go with it. The chef's choice antipasti of 6 dishes (3 freddo/cold and 3 caldo/hot) are amazing. We are vegetarians and told him, so he put together 6 non-meat dishes for us. The couple next to us ordered the same, but theirs had some meat dishes. The special of the day was an eggplant pasta which was phenomenal. We also tried the potato ravioli and a fava bean and chicory purée. This was one of the best meals of our trip!

    Assorted appetites were great and interesting. I ordered the Steak Medallions with porcini sauce. The sauce was good but the steak itself wasn't tender and not sliced into medallions but two small steaks. Having grown up in beef country, a chewy piece in beef turns me off. I expect the meat to be tender and juicy. It was cooked okay with pink inside but the cur of beef was a lesser grade and it showed.

    Excellent, creative food at a very fair price. Cool ambience with the restaurant dug down into the hill.

The ambiance was also just ok. I did enjoy the insalate due, which had crispy proscuitto and homemade croutons, but it didn't come with dressing - rather, they served little packets of oil and aceto balsamico with it. Orchietti is apparently a local specialty, so I ordered theirs, with bacon and crispy peppers (also a local specialty) but the fava bean sauce was not great - thick snd starchy. I appreciated that they had half bottles of local wine, which was nice. My husband enjoyed the baccala, which is a baked cod dish. So not bad, but not as good as noted by prior reviewers. There are better choices in the Sasso Caveoso.
