I have been in Leesville for a few months now and just yesterday noticed this processing plant and…read morebutcher shop. I called in and found out they sell any individual cut of beef to the public.... so today i decided to go grab lunch. I ordered 3 ribeye steaks for myself and coworkers. I regret not taking a picture of the meat, because it was pretty. Very well marbled. We cooked them over a gas grill, and talk about tender. This was one of the best steaks I have had in some time. I am kicking myself wishing I had found this place extremely sooner. I'm not the biggest large blue chain grocery store fan which is right across the street. Now come to find out I had a local butcher option the whole time. This is a MUST try for anyone in the area. Prices are extremely reasonable for the quality that you're receiving. Updated: the very next day we went back and bought 8lbs worth of pork chops. VERY TENDER, extremely juicy. Grilled with minimal seasonings and they were awesome. People at work are raving about them.

All of the food was great. Crab cakes were wonderful and a healthy size, filet medallions were delish and we loved the side sauces that were served with the dish. Salad fresh, shrimp scampi was some of the best I have experienced and the bread pudding was top 2 in my experience. The "Dad/owner" came by and chatted with us before we left and it was a wonderful experience. Only reason I gave a 4 star is because they were out of a few side items. Highly recommend and will be back!

After a little time on the grill they are thin and crisp. Easy to bite through and eat. Not chewy and tuff as I have had from other processors which always seem under cooked to me (even though they are not) The rest of the venison was made into ground and vacuum packed. That was a good choice as it stores well in the freezer. I will return for sure and hope they keep using the same casing in the future.
