We actually ended up at Royal Iberico because another restaurant was full and I am so glad we did! This is one of the best meals I have had in a long time and the attention to detail was so impressive. He devotes the menu to the pata negro pig native to salamonca, Spain. We started with charcuterie and manchego appetizer. It was a trio of ham, salami, and chorizo. It was all amazing but the ham was my favorite and I am already craving it! My entree was the grilled trio, neck, shoulder, and filet. I loved every bite. My husband tried to order the pork chop and he didn't have so he suggested the rib cut. They were cooked perfectly with a crispy outside but still tender, full of so much flavor. He suggested an after dinner drink, a G and T. The gin was pink and from Spain, it was the best G and T I have ever had. Juan is so passionate about cuisine from his home country of Spain and it definitely shows.
