So it was with a grateful cheer from our tummies that we saw a sign in this restaurant that said the kitchen was open. The restaurant was also super spacious with a huge dining option on the 2nd floor and tons of outside seating, and you could see the spire and hear the bells from Saint Salvatore Cathedral. This restaurant also had quite a few vegetarian options - pasta if you wanted something hot and salads for cold plates, so it ticked that box. I ordered hot lemon with honey (€5.70) which was freshly squeezed and just awesomely comforting on a cold afternoon. (Another person who tasted it, said it was too tart for them - but I found it perfect, so gentle reader, make of that what you will!) So for food choices, a co-diner and I split the fish stew and an apple + ice cream crepe. The vegetarian diner got veggie pasta and the 4th member of the group got pasta with frommaggi and prosciutto. The fish stew we shared was AMAZING! It was a layer of salmon and a white fish (maybe cod) in a beautiful tomato and wine broth with just the perfect amount of herbs and cheese to add an additional depth of flavour. We both loved the dish and finished it so quickly that a 3rd diner didn't even get to taste a bite! Ditto for the apple and ice-cream waffle - just simply perfect and scrumptious! I also tasted the other two options and the vegetarian pasta blew me away - the sauce was gentle and creamy and not too cheesy and the roasted vegetables melded beautifully with the pasta. The cheese and prosciutto pasta was also great - I found the prosciutto a bit too salty for my taste, but no complaints with the pasta (perfectly al dente) or the cheese sauce. So yes, this place is probably touristy as heck, but for all 4 of us - it hit the sweet spot and it was great food, and service with a smile!

We were certainly not disappointed. Other than the ribs, this restaurant has an excellent beer selection. Although one could say that a large beer selection is only par for the course at any decent restaurant in Belgium, it is still always a good option. Drinking high quality Belgian ales (also cheap relative to the US, obviously) was a perfect way to complement the meal of delicious ribs. Our appetizer of pate and pickles was quite good. After ordering one rack of ribs each, we devoured our food. Taking the plates away, the waitress asked if we would like more. 'You mean I can have more?' I asked. Turns out for less than 20 euros, you got up to 2 racks. I unfortunately could not complete all of round 2. Some of the meat was slightly dry in places, but honestly given that some of the ribs were prepared with dry smoking cooking methods, it really did not detract from the meal in any way. The staff could not have been nicer, and my girlfriend and I briefly chatted with our waitress about how she enjoyed living in Ghent. I had cheese croquettes with fries and they were delicious. For dessert I had apple strudel, which again definitely hit the mark. My wife loved her lasagne and followed it with a Dame Noire. The setting was typical for the city. The Aquarel is situated in a thriving small square full of places to eat, and you can eat indoors, or out in the square, which is where we always choose to sit, weather permitting. Service was prompt and friendly and we would certainly head there again the next time we visit Bruges.
