We've had Chef Elena cook for several of our holidays and it has always been a flavorful delight. If you struggle with missing those pre-vegan days comfort foods- try the potato skins; They are a satisfying treat. Her Spinach and Artichoke Dip is one of my favorite dishes that she makes; With it's depth of flavor, it doesn't matter what you use to scoop it into your mouth- chips, crackers, veggies.
We have tried numerous of her Thai dishes, and each one is prepared with great care and attention to detail. The vibrant colors of the fresh vegetables and aromatics of the spices are only the beginning of your culinary journey. My favorite is a Thai Coconut Soup. The delectable layer of flavors with subtle hints of lemongrass and spice, make this dish a real delight.
We have also had Chef Elena cater a small birthday gathering. From her craft cocktails she made with fresh cayenne infused liquor, to the Street Taco Bar she set up, the night was perfect. My mouth is watering just thinking about the lightly spiced Jackfruit Tacos topped with zesty Pepita Cheese, fresh Pico De Gallo, and Chipotle Roasted Corn, with a side of divinely scrumptious Spanish Rice and Black Beans. Don't forget to top it all with a big scoop of guacamole- the best I've ever had! It's one of those meals that will leave you full but wanting more.
