Parking was easy by the street guys wearing green vests they will direct you and when you leave you tip them easy enough. I went in through a side and went across the produce and meat section had to go fast since its smells like well raw blood and such. Then entered this pavilion where all the kitchens are, here you get to walk around and find whatever catches your eye. I settled to this placed called Cocina Carmelita Booth 408 i think. Food seemed the freshest and i wanted to try everything but couldnt. so main stuff. plate was full and gave me fresh out the machine tortillas. If you want a true fonda experience come try this. food is really fresh since is made right in there and the ingredients are bought next door. I was done in no time and was delicious. I have to come back and try my other options there. menudo, tortas and such but i will be on next time.

Our server took our order quickly, the food came out quickly and was amazing. The drinks took a little longer but nothing out of the ordinary, still quick for a business that was packed. Basically you create your own noodles or rice choosing which ever ingredients you would like. They are not very generous with their protein portions so I would recommend getting extra. I was very pleased with the combo I made today. I got the fat noodles that they automatically cook with egg. You get to add 4 ingredients; mine were pineapple, broccoli, carrots, and onion. For my protein I got a combo of arrachera (beef) and chicken; I wanted to get tofu but they were out. For my sauce I asked if they could combine the oyster sauce option with tamarindo because straight up oyster sauce would just be too salty. All in all it cost me 58 pesos which is about $4.31 USD. I'll consider giving them 4 stars if I continue to have the experience that I had today! 5 if they ever stock their tofu and give a bigger portion of protein!
