Puro has been open about 6 months - new on the Trieste dining scene but worth a visit. The decor is quite attractive and you can see what's going on in the kitchen - it's behind glass and totally visible to diners.
I had the Fuzi Istriani which is a very interesting traditional dish - the pasta is made with red wine instead of water, and you can definitely taste that it is fatto a mano. My wife had the fishburger which was made of salmon and my friend had riso which was sprinkled with botarga. Both enjoyed their choices. The service was a tad slow but worth the wait.
The bathrooms are spotless and very attrractively done.
