Ok Pat, We met today. I bought a hangar steak because I didn't want to get a prime rib loin (due to not having enough money this month). This place is one word....AMAZING! I was in the area for my daughters horse back riding lesson and I was looking for a butcher shop to get some steaks for the evening and came across this place. The business model is simple, they have a farm they source most of their meet from in Missouri. They wet age their meet and you are required to purchase the whole roast. We decided to get some bone-in ribeyes which ended up being around 12-14 steaks in total. But wait..it gets better! After they cut your steaks from the roast, they hand trim and package each individual steak. I'm not sure what they exactly do during the process, but all I can say is that the steaks are phenomenal!!! We had Pat, the owner, taking care of us and he went above and beyond to make sure we had a good experience. He gave my kids a little tour, explained the history, showed some newspaper articles about their orgins, etc. He is super serious about his meat and the quality shows! When he was preparing our steaks and it was completely cut, he wasn't 100% with the quality and thought the steak may have been shocked during the aging process. Without us saying anything, he said he was going to get us a new one and he would take the first one home as he genuinely wants his customers to be happy. Because of the preparation process, it does take about 20 minutes for them to fulfill your order, but you can call ahead if you're going to be coming in. I really can't recommend this place enough and wouldn't go anywhere else! And yes, you'll need to freeze some of the steaks, but they are still super tender and your guests will be amazed! read more

Old world, first class service. High value cuts of beef that you can hand pick. Trimmed the way you like it. Pat's team took a beef tenderloin and make me Filet steaks that cooked up delicious. The usable trimmings were steak sandwiches for lunch the following day. The narrow end of the tenderloin was roasted into medallions for another dinner. We went back and split a short loin with my friends. Pat made us Porter house and T-bone cuts at exactly as thick as we wanted. They have great selection of seafood, ribs, beef brisket, skirt steaks, hanger steaks, hot links and sausages. I plan to go back for more. We don't shop for our meat anywhere else! Every meal we prepare comes out delicious. The prices are unbeatable and they have such a great selection. The staff goes above and beyond to make sure you're getting exactly what you came for. We purchase 5 chicken breasts biweekly- which they trim the fat off, slice nice and thin and freezer wrap for us to take home. The chicken comes out so tender and tasty! We normally grill this and add to our salads, or bread them and fry chicken cutlets. The chicken is never tough and we are always pleased with how it comes out. We also frequently purchase 8-10 pounds of beef that they ground for us. Highly recommend for tacos/ burgers. We add some of the plain ground beef to our German Shepherd's food. And they have a couple selections of bones that kept in the freezer that our dogs go crazy for. (We have 3 big dogs at home that have a high food intake so we treat them with fresh food from Prime Beef) Today we tried the chorizo and had it with our eggs for breakfast. When guests came over they complimented how amazing the house smelled. Needless to say the meal was phenomenal. The feta is also DELICIOUS and we normally purchase our olive oil here. Lastly, We have tried the filet mignon on special occasions - what a treat! We are thrilled to have a local butcher with such affordable prices and great quality food.
