You have to love the concept of reverse migration at work here, with the Québécois (old French) coming to France (new French) and showing the supposed experts at bread (the French) a thing or two about flour and yeast.
The breads are a feast for the eyes as well as the stomach. They might be more expensive but they are still a good value because they are more substantial. What passes for a restaurant baguette, their "l'Olympique" is more like two restaurant baguettes and lasts longer. Their "nuages" (a square form of boule, deeply crusted) served extremely well on the dinner table as well as for toast at breakfast. The variety of breads is impressive, at times exotic, and the several that we have tried maintain the same high quality. We only wish we had time to try them all!
The boulangerie is located immediately next to the largest site for the market in Aix and should not be missed.
