Everyone loved the starter (cheese and charcuterie), the main (chicken breasts) and sides (a watermelon, heirloom tomato salad and a couscous salad). The desert (a shortbread-like cake with rosemary whipped cream and fresh berries) was a hit. Shannon worked closely with me (from afar) and my parents (locally) to ensure that everything was to their taste, imagination and liking. Shannon also ensured that everything was as local (Colorado grown- and based) as possible. She even suggested wines from a vineyard in Laporte which, sadly, we never got to. On the day of the event, Shannon and her staff were there, everything ran exceedingly smoothly, and she checked in with me regularly to see when we could move on to the next course.
