Looking forward to going back next time I'm in Merida. Process: You pick up a pan and use tongs to pick out your items. Take your items to counter one, where they give you a list of your items to take to counter two. At counter two, you pay for the items while counter one bags up your order. Once you pay, you go back and grab your items.
