Our server hesitated, saying he didn't have any. I saw open tables and pressed, he said ok but you have to finish by 3:30. No problem - I'm there for a tasting, not a pub outing! After that we enjoyed our sparkling flight and the halibut dip appetizer. Purchased a few bottles and on our way. Our tasting at Vara later that day was truly outstanding. ‍

If you're looking for a moody, elevated cocktail experience in Santa Fe, As Above, So Below…read moreDistillery absolutely delivers. The moment you walk in, the atmosphere pulls you in--an almost mystical aesthetic with curated decor (think mounted skulls, vintage accents, and cozy lounge seating). This makes it perfect for a date night or a unique night out. The space is intentionally designed to feel immersive, and it works. I ordered a gin cocktail with a tajín-style rim and fresh cucumber garnish, and it was incredible. Crisp, refreshing, and perfectly balanced with just the right amount of spice. Service matched the vibe--friendly and knowledgeable about what they're serving. It was easy to sit back and enjoy the atmosphere. This is one of those places that feels like a hidden gem--unique, a little edgy, and far from your typical bar scene. Whether you're into craft cocktails, cool aesthetics, or just want somewhere different to hang out, this spot is 100% worth checking out.

Service from the bartender was thoughtful, knowledgeable, flexible, and engaging. My colleague initially wanted to taste one item based on another vendor's recommendation to visit this venue. A wise one! The bartender noted in the flight menu that the beverage in question could be added to the flight. Very nice of him, he didn't delete a flight to fit it in, either! Another colleague asked if she purchased, would the flight be free? Answer: yes! Two bottles, minimum. She loved them all, but selected three of the flights to purchase; two full bottles and one half bottle. (Business traveler/ International colleague with a travel liquor limit). Bottles were very well priced, and she'd can't wait to introduce them to colleagues in Taiwan! The decor and spacious area set a casual, respectful vibe which lends to a great venue for small groups, solo visitors, and couples on a date. There was a solo reading customer comfortably seated in a couch set up like a living room. There was a couple in another seating area and some friends at the bar. Didn't look much further in though. My colleague was very well pleased with her tastings and purchase, and I'm sure you'll receive the same great service from the bartender!

But the seating options were good - they had both patio and indoor tables, plus a bar to sit up at. There was a stage in the corner so I'm assuming it's a lot more fun and lively when they have a music night. I ended up getting a flight to be able to taste a few of their beers but unfortunately didn't love any of them. I probably liked their brown ale the best. They offer VIP parking for an extra fee but it's just a few spaces behind the stage. It also rained this week so that area was really muddy. Otherwise guests can park in the front lot (which was all full from people visiting the taproom), the back lot behind the tap room, or the field next to the tap room which opened up when the other lots were full. I got here really early and managed to get a space in the back lot and I recommend you get here early too if you're seeing a show. At the end of the show the staff opened the back gate leading to NM14 so that helped a lot with traffic flow. I didn't need to go back to the entrance and turn onto Fire Place. During the show there was only one food truck available and they cut off orders several times because there were too many people. That was disappointing because the information for the show said "trucks" (plural). We weren't allowed to get food from the taproom and bring it over to the venue either. From what I understand, in and out access at shows is generally not permitted but the staff said it was ok because my friend wanted to drop off his merch in his car and come back. The drinks were ok but really expensive - they were $11 each so my friend and I only got one apiece. I'd visit this place again, but only if a show was happening.
