We also had the rice of the day from Le Petit Tamboril, which was a paella of rice boiled in a yellow seafood broth along with chunks of shrimp and calamari. The rice had a deep, umami, seafood flavor from the broth and perfectly crispy, caramelized bits (socarrat) on the bottom of the pan.
