I had a simple pressed panini with speck and brie in fresh crusty bread. It was affordable (5eu) and delicious. Add a mineral water for another euro and then caffe and pistachio pasty for two more and I was all set for only 8 euros! They kindly let me eat and relax and settle up at the end. I was wondering what delicious speck was all about since I believe it means lard in German. However, I discovered it is another Italian masterpiece of meat preservation. Speck is cured and smoked meat from the Alto Adige region in northern Italy and near Austria. To make it, you bone a pork leg, cure it in salt, laurel, and juniper, and then periodically smoke it with pine or juniper wood for months! Yes, that's right. MONTHS! It's an amazing red color with marbled traces of fat. Sliced thin to maximize flavor, it's an incredibly delicate and delicious meat rarely found in the United States. Try it next time you have the chance!
