And one of my fave things about Indian food is that you often have something super savory and spicy paired with something cool and bright -- that contrast is just the best. Like the aloo tikka chaat, for example: perfectly boiled potatoes, onions, and all kinds of spices served piping hot alongside a mint-coriander yogurt sauce and chickpeas... Yes, please! And that's just a single appetizer. I'm a big fan of both the lentil and tomato soups, the butter chicken, chicken tikka masala, aloo matar (potatoes & peas), saag paneer (spinach & Indian cheese), any kebab, and all of the rice! I plan to make my way through the entire menu (whatever is gluten free).
