At 11am on a winter Sunday, the stammtisches are rapidly filling. A wood fire burns in the kochelofen-- there's a coat rack right by it-- unfiltered beer from hand-tapped wood casks is being served. Huge hunks of pork on the bone, cups of strong broth with bites of marjoram-scented liver pass by. It's indeed tough not to immediately love this place, Bamberg is cozy, old-school charming. The overwrought buildings are bent with hundreds of years of age pressing on their wooden bones, the work of time only increasing their crooked beauty. This place is a bit more solidly built, but it is permeated with those same venerable sensibilities, through and through. I've been seated with strangers every time so far in Bamberg, right now with a couple in their 60s. They are friendly and curious. We have a little conversation about beer and food, about Portland, Philadelphia, and Bamberg. Some jokes are exchanged, we all clink glasses and look each other in the eyes. "Prost!" "Zum Woehle!" It's fun to watch the man behind the bar pour. I've kept a close watch on him. He moves like a Franconian angel in his beautiful green vest, not a step wasted: he takes as much time as he needs, wastes none of it. A young man with about eight earrings, plenty of tattoos, and a trimmed beard moves the food, and a well-practiced woman brings the beer and takes the orders. Her service is very pleasant: I never feel bothered or interrupted, and although I only have a few seconds to reply, in those seconds I have her full focus. Golden beer is flowing out of hand-tapped wooden casks. It's exceptional, kinda gives new meaning to /lagered/. Very well-balanced, very easy to drink (I think they'd fine Pacific Northwest hops a bit shocking). Regulars are served in earthenware crocks with pewter lids. I wonder if some have monograms. The older men and women rap their knuckles on the table when they arrive. I finally order food. I get beef soup with liver dumplings, and braised ox-breast with horseradish sauce and huckleberries. It's all hand-made and just delicious. The knoedel are some of the best I've ever had. The Tafelspitz is moist and it's cloak of horseradish cream reminds me to pay attention, relatively gently. Between bites and quaffs, I watch the snow falling outside and try to parse the thick accent of the locals.  The train back will in a few hours, but I don't want to go. It's too cozy-- I'd rather drink more beer, and try the giant blades of roast pork I see going by. But, I have to: it's afternoon now, and I have to work tomorrow. Guess I can't just sit by the fire forever, but at the moment I sure wish I could.

Great beer, decent food, nice beer garden atmosphere. The service staff is attentive and quick, as well as accommodating for non-locals.

While wandering the old town and it's very nice market (and enjoying abundent gluewhein mit flaming rum) we settled down for a nice lunch at Schlenkerla. Great choice! First, the smoked beer. Not my favorite, but hey, when in Bamberg ya gotta try it. The menu was not extensive but that's not a negative. I think too many restaurants offer too many choices with too little quality. Not a problem here. My friends ordered gulasche soup; a baked potato with salad combination plate (with two "small" baked potatoes drenched with what appeared to be fifteen pounds of butter); very tasty sausage with very, very tasty sauerkraut; and what I ordered: Bamberg style stuffed onion with mashed potatoes. I thought I was being virtuous. I must rethink my definition. The two very large onions were stuffed with a pork/bacon/bread/herb mix then roasted. Delicate taste that paired beautifully with mashed potatoes and smoked beer/beef stock sauce. Wunderbar! Look, I'm not a fan of tourist traps. Schlenkerla is certainly well-promoted to all of the tour operators, but most of the diners were obviously local. The menu was the same for all, as was the service. Excellent choice, and highly recommended.

They are quite busy in summer, but they made space for our large group. Great hospitality. But for some reasons they do not entertain bachelor parties.

It seems that during the winter there is no outdoor seating (you can still access the outdoor patio though), and indoor seating is pretty tight. Nonetheless, it creates these cozy nooks for a genuine 1300s throwback Gasthaus ambiance. The waitress was helpful and quick. From the many choices of beer, we chose the Schenkerla smoke beer. With that we ordered the roasted pork shoulder and schnitzel. The meals were superb. We havent had any German/Bayerisch cuisine in a while, and the food were the perfect comeback dishes. Meats were super tender and not too oily. The kartolfelsalat and knodel garnishments were great and not too starchy. Awesome spot, and would venture to say that it beats Tucherhaus and Hofbrauhaus. Would definitely dine here again.

We arrived with a 7pm reservation, no reservation no way to get a table, and there was a Stammtisch with local men at our table. They waved us over, and as a few had already left their group, there were 3 empty chairs, so we sat down and started chatting with them. They were a group of friends collected over the years from school, work and community. We three ordered our drinks and dinner and had a pleasant chat with the two who remained. They ordered another round and sat with us. Germany is one of those places where you are very likely to share a table with total strangers, but other than a polite " Guten Appetit", usually no conversations occur. Here we had a pleasant chat with two complete strangers about Bamberg, beer, beer gardens, Keesmann, toasting etiquette, tourists, locals, and life. At the end of our delicious meal, we ended up setting up a city tour with one of them who offered to show us the area from a local perspective. I ordered the Hirschgulasch, Elk goulash, with red cabbage and a potato ball. The goulash had cranberries in it and was sweet but not too sweet. However much I thot the red cabbage was good, it was a huge heavy meal, so I couldn't eat much of the cabbage or any of the potato ball. However, I loved the goulash and the cabbage was also warm and delicious. I had a .25liter glass of their dark beer, Sternla, and that was the perfect size. Great taste, not too heavy. My spouse had their Schweinekotelett which was humongous and fried and breaded, which he liked, but it looked like a heart attack about to happen. Our friend had the same as I and liked it as well. In the end, our meals were great, the server was very friendly, and the two men were pleasant company. My spouse and I even got the promised local tour of the surrounding Bamberg county with two small local breweries where he knew the people and the beer was good.
