My favorite dish was the tonnaroli pasta with sausage, red onion cooked so long it liquefied, and a sagrantino wine reduction. The flavors were intense, original and memorable. I have lived in Italy and am 100% Italian so my palate is demanding - and it was one of the best plates of pasta I've ever eaten.
