All my life I thought maybe you needed egg for the perfect chilaquiles but truth be told we got theirs with and without egg and the way these folks melt the cheese, it gives it this amazing texture not unlike a perfectly runny omelette. The egg is not in fact required. The flavors are rich, the chips are perfectly crunchy and crispy yet still drenched in salsa, and the meats and toppings just sing. Definitely by far the best chilaquiles we've ever had, and it's not even close. If you don't try Chilakiller's, don't bother ordering chilaquiles anywhere ever again because if you cared about chilaquiles, you'd have them here. Eat here, you won't regret it! We also had a few cocktails each (all of them were great). No complaints about the menu, food, or drinks! The location is wonderful! The restaurant is one of several that overlook the Parque de Santa Lucia. Great outdoor/al fresco dining. There was live music while we enjoyed our meal, and it just had a great ambiance overall! It's pretty much all here, which is a big plus. The staff is very tourist friendly, and can speak and understand English well. They even asked in advance if anyone had allergies. So, for the less adventurous, it's an 'easy' experience. We ordered a variety of dishes...Lomitos, Pipian de Pavo, Pan de Cazon and more. All tasted fine, though we've had better on our tour of the region and at lower cost. The Chaya de Pina was fantastic. I'd recommend that for your agua fresca option. Service was attentive. High marks there, and it's clear they expend a lot of effort on the front of house experience, though the tortilla maker sitting in the room making tortillas by hand felt a touch gimmicky to us. In essence, if you want an expansive menu, easy for the English-speaking tourist, this is a good place to go, or perhaps to start your journey. You might lose some authenticity and pay a bit extra as a tradeoff. Chaya Maya does execute well, even if it has a bit more of a polished, corporate feel to it.

And I'm glad that we stepped in. We had an amazing dinner. I ordered enchiladas and I forget what my husband had. But I liked them because they tasted like the Mexican enchiladas that I'm used to. We liked this place so much that we came back for breakfast the next day. Again, the meal was quite good and filling and had we come earlier in the week, we would have returned, however, there were other corners and interesting places to checkout. While there the service was very good. They weren't full. They had a cute little stand onto which I could put my purse. They also had an interesting looking bar. We did have some chips with three different salsas. Each was interesting. I also believe that we had the guacamole which was quite good and tomato-less. Overall the food was decent, but drastically overpriced compared to the numerous other options in Merida. But the worst thing about Piñuela is the service. Our waiter was never to be found, and took forever to get us basic things like water and napkins.  In fact, our dishes were sitting on the pass for so long that another waiter ended up bringing us our food. All 5 dishes all at once of course. Finally, as other reviews have mentioned they tried to sneak in a 15% tip to the bill total. I asked about it and the waiter suggested it was "optional". He then waited at our table until I paid, which was tremendously awkward. It's obvious he was trying to pressure/guilt us into paying the full tip. The management at the restaurant clearly cares nothing about the experience of its customers. Please from my mistake and don't bother with Piñuela.
