Prices are very reasonable: the Formule (main and dessert or appetizer and main with wine or coffee) only 10€; fixed Menu at 18 & 23€. One of our party tried the 18€ menu starting out with the Ariege Salad (a meal in itself with aged ham, duck breast, foie gras, fresh walnuts, carrots, tomato, daikon, at least 3 kinds of greens in a light oil and balsamic dressing) and salmon, cooked to perfection with a crazy chorizo concoction on top giving it extra zip. My main was cannelloni done in the style lasagna would be done at home, but with buckets more flavour - it's amazing what happens when you use fresh tomatoes, spinach and cheese made locally. Oh ya, we had dessert too, but my head pretty much exploded with surprise and delight after the cannelloni. I heard it was spectacular, too. Great food at a great price. The only problem we had was figuring out how to open the door (push IN, firmly).

While on a tour, my tour group and I had some time to break for lunch, shopping, and sightseeing. I passed by Couteaux Fourchette and didn't immediately walk in as I wanted to explore the other dining options available. Well, let me be the first to tell you that there aren't too many options in this tiny town. I circled back around and the Gentleman whom I assumed to be the manager welcomed me immediately. The restaurant is tucked away in a small alleyway that's located right in the center of town. What I've learned about European alleyways is that they are nothing like American alleyways. You want to find those hidden alley gems when you see them. Their cute little alley patio space is super relaxing and enticing. I sat on the patio and enjoyed a glass of some delicious French white wine that I had never had or even heard of before. As versed as I am in American wines, I must admit that I haven't had much exposure to Southwestern French varietals. This was a new experience for me as was the delectable meal that I consumed whilst I was here. Pyrenean Pork confit simmered in French onions over potatoes and topped with melted local cheese. When I tell you that this pork just melted in my mouth... just wow! It was so tender and delicious. It was like juices from the pork and onions saturated the potatoes underneath because they were super moist and flavorful. Never would have thought to put melted cheese on top of this concoction, but it was literally the best part of the entire meal! Swirling my fork around in the cheese and pulling those lovable strings of gooey goodness was just... mmmm! Loved every second of this meal. Every. Damn. Second. I guess the other passerby's noticed my joyous facial expressions as I basically dove head first into this mouthwatering meal. They all started swarming into the restaurant, and a few of my tour group mates joined me outside and ordered lunch there as well. I love that this place has food specials for tourists. The service was great and the ambience is so beautiful. You will definitely get the true French experience here! I'm still dreaming about that delicious food and wine. Not sure that I'd make it back to this place anytime soon. But if and when I find myself back in Ax-Les-Thermes, I'd be headed here again no questions asked.

The Parisian mushroom soup with leeks was refined comfort perfectly seasoned with poivre . Lot (monkfish) served over a fennel, celery, fresh pea risotto garnished with cilantro and again the perfect amount of poivre. The graduating levels of texture from the celery to fennel to peas to risotto to fish was impressive. The cilantro was an unexpected bite of delight. Dessert was blackberry sorbet over pineapple carpaccio with a refreshing delicate lemon sauce. Chef Karl adds deft delicate touches of unexpected delight and detail to the classic fare. Best Amazing value in the area for 18 Euros!
