Dinner #1: Complimentary ANTIPASTI MISTO SALUMI E FORMAGGI (platter of local cured meats, cheeses and bread). All the fish and seafood dishes were fresh and cooked to perfection. SPAGHETTI ALLE VONGOLE (spaghetti w/ sweet little clams); FRITTO MISTO CALAMARI E GAMBERI (calamari & prawns deep fried in light batter); PESCE ALLE GRIGLIA (grilled catch of the day). Meal ended with a delicious Sardinian dolce called SEADAS, a crisp airy pastry filled with sweet soft cheese and drizzled with golden Sardinian honey. A perfect end to the meal and worth ordering even if you're so full you swear you couldn't eat another bite. You can. I promise. Dinner #2: Fresh caught SPIDER CRAB 2 ways, first course was a simple yet divine crab broth with crab roe and fregola (small pasta similar to couscous) followed by the main course of fresh whole crab. The pure white crab meat was sweet and soft like a salty sea mascarpone cream. As delicious as it was I could have just eaten a whole pot of the crab soup and died happy. Gloriously happy. Dinner #3: MAIALINO ARROSTO (roasted suckling pig). This was the single most delicious meal of pork I have ever tasted in my entire life. Salty-crisp skin that shatters between your teeth like glass and rich, moist, tender meat that melts like butter. The suckling pig we ate that night fulfilled its life's purpose when it arrived in maestro Lino's kitchen. I cannot over-emphasize how perfect a meal it was, accompanied only by a platter of mixed grilled vegetables. If you eat only 1 meal in Sardegna, let it be the maialino arrosto at Lino's trattoria!!! Dinner #4: TRUFFLES!! Meal began with ANTIPASTI MISTO (heirloom tomato dressed in olive oil and aged red wine vinegar, assorted cheeses, olives, bread). 1st course was room temp POACHED EGGS with gloriously runny golden yolks and grated *black* truffles. 2nd course was warm poached eggs with grated *white* truffles. Most decadent poached eggs of my life. 3rd course was al dente TAGLIATELLE tossed in olive oil, butter, and more grated truffles! The simple pasta seasoned to taste with salt & fresh ground black pepper was a perfect showcase for the rich, earthy flavour of Sardinian truffles from Laconi City. Just when I thought I couldn't eat another bite, Lino placed a 4th dish on the table: BRAISED BABY GOAT RIBS.... with shaved truffles! Not only do I adore goat, but this was the most tender, succulent goat meat I've ever tasted. The ribs were plated in a pool of bright red-orange drippings which initially made me a bit apprehensive. By the end, I was using the last crusts of bread to soak up the glorious fat drippings and savour just one last bite before surrendering defeat. We finished our last meal with espressos and an ice cold shot of MIRTO before rolling ourselves up the hill to bed. Not only is the food delicious but Lino and Marlitha make guests feel as warm and welcome as family. Even their adorable dog Daisy filled the empty spot under the table where our own pups usually sit. Despite speaking limited Italian, we were honoured to share a glass of wine with our hosts and enjoyed several animated evenings of conversation, proving that excellent food can bridge language, culture, and country.     English review: Da…read moreThomas has been a staple of the Santa Teresa dining scene for over 40 years. If you want good seafood, you can't go wrong with a dinner at Da Thomas. Dishes are tasty, portions are generous, and local ingredients are often used in an inventive way. The setting is upscale without being stuffy. The menu is quite substantial, and even if you don't like seafood there are plenty of options. On a recent visit for starters I got to try the fried sea anemones, fried baby squid, and cuttlefish with smoked ricotta. I tried the fried anemones as this is something you don't see often on a menu; they have an interesting, soft consistency that is not for everybody. The fried baby calamari are served with vegetables and a cream of carrot and ginger. I really loved the cuttlefish, served with a cream of peas and the smoked ricotta that adds flavor without covering the cuttlefish. As pasta dish, the trenette with redfish and red prawn are fantastic! I like how this simple dish packs a lot of flavor. Another pasta dish I would recommend is spaghetti alle aragostelle. Pasta dishes are also large enough to be shared among two people, if you would like to try more than one dish. As main course, inquire about the fish of the day. They also serve two different types of lobster (aragosta = spiny lobster; astice = American lobster), cooked in different ways, including "alla catalana" with tomato and onions. For dessert, crema alla catalana is a perfect way to end your meal. Keep in mind that service can be slow. All servers are good, but in the summer the restaurant is packed, and the kitchen is likely overwhelmed. You may have to wait 45 minutes or so between one course and the next. My recommendation is, unless you found yourself in Santa Teresa in the off season, to always reserve a table. And if slow service bothers you come early like 7:30pm. -------------------------- Recensione in italiano: Da Thomas e' un'istituzione tra i ristoranti di Santa Teresa da piu' di quarant'anni. Se volete pesce buono, cena Da Thomas e non si sbaglia. I piatti sono gustosi, le porzioni generose, e ingredienti locali sono spesso usati in modo originale. L'atmosfera e' raffinata senza essere The formale. Il menu' e' piuttosto ampio, e anche se non vi piace il pesce ci sono tante opzioni di piatti di terra e verdure. Durante una visita recente come antipasti ho provato gli anemoni di mare fritti, i calamari spillo fritti, e le seppie in vellutata di piselli e ricotta mustia. Ho provato gli anemoni perche' e' un piatto che non si vede spesso in giro; piatto interessante, anche se la consistenza molle degli anemoni non e' per tutti. I calamari spillo fritti vengono serviti con verdure fritte e una crema di carote e zenzero. La seppia mi e' piaciuta molto, servita con una vellutata di piselli e la ricotta mustia (ricotta salata affumicata) che aggiunge sapore senza coprire la seppia. Come piatti di pasta, le trenette allo scorfano e gambero rosso sono buonissime! Questo e' un piatto semplice davvero molto saporito. Un altro piatto di pasta che suggerisco sono gli spaghetti alle aragostelle. Le porzioni dei piatti di pasta sono generose abbastanza da condividere un piatto in due, se desiderate provare piu' piatti. Come secondo, chiedete qual'e' il pesce del giorno. Servono anche sia aragoste che astici cucinati in diversi modi, tra cui "alla catalana" con pomodoro e cipolle. Per dolce, la crema alla catalana e' il modo migliore di finire la cena. Il servizio puo' risultare lento. I camerieri sono tutti bravi, ma in estate il ristorante e' sempre pieno e la cucina ha probabilmente troppo lavoro. Puo' toccare di dover attendere anche 45 minuti tra un piatto e l'altro. Il mio suggerimento e', a meno che non vi trovate a Santa Teresa fuori stagione, di prenotare sempre. E se il servizio lento e' un problema, venite presto, alle 19:30.
