Ce bon restaurant traditionnel vous proposera d'excellents plats, cuisinés par un chef emprunt de nouveautés, pour une vraie découverte culinaire. Une cuisine faite maison basée sur des produits frais et locaux. Pour commencer, laissez-vous surprendre par un velouté de homard frais parfumé à l'estragon ou l'incontournable foie gras accompagné de son délicieux pain d'épices et sa confiture à la quetsche. Côté plat, laissez-vous surprendre par l'incontournable côte de veau sauce morilles. Amateurs de poissons ? Le chef vous propose le médaillon de Bar et Homard à la sauce crustacée, des cuisses de grenouilles fraiches au Riesling aromatisé à l'ail. Concluez cet instant par une petite douceur : le vacherin glacé ou le Cyrano glacé au croquant. As we walked to our room to wash up he sort of added "c'est deux etoilles Michelin..." I guess he needed to set our expectations. When the amuse-bouche arrived it set a high level. The snails-in-fois-gras seems like a can't miss type of thing, but the solid disc of choucroute with some sort of pork sausage pate was regional and quite amazing. We ordered the lobster (hey... we're from Boston) and venison (hey... we're in the verdant hills of the Vosges). The sommelier was very helpful and knowledgeable of the thick tome of local wines. We ignored the thin book of wines from other regions because when in Rome. After a thoughtful 10 minute conversation on what might work we settled on an unusually aged Sylvaner. We also learned the Somm is a Celtics fan. Being a regarded restaurant in France, every course involved at least four folks moving with the precision of a Marine drill team as they descended on the table, bussed the plates, swiped away the crumbs, and left whatever new treasure they'd created. The lobster was an interesting take. A deshelled lobster presented on a salad of potatoes and apples with bits of herb mousse circling it. Kind of amazing to look at. The venison was a few medallions surrounded by little dallops of things. (If anyone from the restaurant reads this... the raspberry sauce just distracted from the intense forest of the meat.) Too bad we're so far because otherwise we'd be back!

Since then they have definitely renovated this place. The rooms are pleasantly appointed. We even had a lovely balcony with chairs and tables which unfortunately were full of snow. But in the summer it would be great to sit and had some coffee or red wine. We chose the half board and had a lovely five course gourmet dinner the two nights we spent. The food was prepared perfectly. The second night our meet course consisted of filet mignon. We ordered it blue rare, and it actually came that way. For breakfast there was a lovely buffet with a variety of jams, fresh baguettes, cereals, yogurt, cold cuts, cheeses, two different types of cake, and even German Christmas Stollen. The Beau Site has a sister property a block down the road. There hotel guests can use the spa facilities. There is a lovely heated pool, a Jacuzzi, as well as steam room and dry saunas. There is a charge for this. When we arrived at the property he already had robes, towels, and slippers waiting for us. They also offer a variety of treatments but we passed on those. We will definitely return some time in the spring or summer.
