Truly artisanal. They are mixed and frozen by hand, by people that rotate a metal container that sits inside a wood container with ice and salt. No electric motors.
I had guanabana (sorbet) and chongos (dairy ice cream). Chongos is short for chongos zamoranos, a Mexican milk-based dessert. There were pieces of chongos in the ice cream and it was delicious. At Mex$26 for a medium, it is at a really good deal.
They have a line of Splenda-sweetened ice creams, and also yogurt-based. I did not try either one of them.
Don't be discouraged by the long line. It moves fast.
