That has of course mainly hit Amsterdam and Rotterdam but even in a small town like Tilburg now have a few places taking a go at it. They have a nice space with a lot of seating so easy to find a spot. Free wifi available so a lot of people sitting with computers but only a few of the tables have any power available so choose wisely if you want to be able to charge phone or computer. They offer a variety of cafe style dishes (salads and sandwiches) as well as pastries. That was however not my reason for visiting as I was there for coffee. I sampled a good espresso and a very good flat white. Both made with beans from Antwerp's Caffenation and I also tried the hand-brewed V60. Made from nice Kenyan beans also from Caffenation but the execution was lacking so over-extracted. Still would try to order again and ask them to use Aeropress instead. This place is great to be in Tilburg, in a bigger city it may not stand out as such but here it really is the best place to come for coffee.

The bookshop has a stock of more than 1500 pop-ups and moveable books. In other words, it is pop-up book heaven. Aside from the massive collection - you can spend hours in there, opening and playing with each of the books - the wonderful thing about this store is the owner's obvious love of the craft. He's very eager to show you some of his favorites and the nuances of each of the books. There's a reason why pop-up book authors are called paper engineers and even if you are a pop-up newbie he will help you appreciate the craftmanship of these delicate creations. There is plenty of seating so you can take your time with each book, opening and discovering all the moveable pieces. Some of his books are new. Some are second-hand. But all are in excellent condition and a special treat. He also has an extensive stock of pop-up cards for birthdays, weddings and other occasions - much better than your run-of-the-mill two dimensional greeting card. I highly recommend making the day trip to Dordrecht. Explore the city and pop on in. He has an online shop too but really the collection is best seen first-hand.

For starters I ordered the trio foie gras. Each version was completely different. I think my favorite of the three was the the one cooked on appelcompote and all were divine. For my main course, i ordered the roast lamb with the couscous. the lamb was perfectly cooked and the macadamia herb crust added something special to the dish. Normally I hate peas and carrots, which were in the couscous, but I ate them up like they were sweet candy. A wonderful meal with great people and all around fabulous experience.
