As long as you stay on the beef cut everything is fine, no matter what you take.
We had some starters: carpaccio followed by veal rolls with rocket and gorgonzola cheese, both raw of course. Supreme.
The dinner continued with a special Japanese breed - Kobe Wagulem -(now bred in Italy) grown with hand massages and music. The meat was like butter.
A lava stone grill is set on the table to complete the cooking as you please.
Regrettably lamb was not the same, too old and salty in my opinion. Arrosticini (lamb skew) was different: hand made, tasty... Delicious.
Overall the experience was good and the cost perfect for what we eat (in comparison to the "matured" one I have to buy in the UK for the same price).
Interesting wine list, though I would have expected my red wine being served chilled.
Things that can be improved are the dessert list, with a better home made selection and the toilet that were not clean (at the very beginning of the service) nor supplied with soap and towels. They are also not in line with the standards.
Last but not least, there should be more coordination between the kitchen and the grill. In fact, we have been served (delicious - with the exception of fries) local vegetables way before the meat, which almost forced us to eat bread.
Final note about the owner: Dino is a very nice person, with plenty of experience when it comes to meat (he used to be a butcher for 10 years before opening the restaurant).
