I ordered the seven-course Fluctuations tasting menu, including the Cacio e Pepe en Vessie.
The meal opened with a curated aperitivo experience: a quartet of amuse-bouches offering a range of textures and subtle flavor combinations. While I couldn't name every element, the interplay of crisp, creamy, herbal, and warm sensations was intriguing. Bread service followed with a flavorful sourdough and crisp grissini, both served generously throughout the meal. It was a small but memorable gesture that set the tone for hospitality.
The first official course featured raw Sardinian langoustine with almond cream, citrus, and sage. The texture was cool and tender, with restrained herbal and nutty elements that complemented the sweetness of the seafood. As it stands, I reserve five stars for meals that feel truly transcendent, and this one came very close.
