Wow. Where do I begin? This dapper handsome older man in his Panama hat really knows the art form of knife sharpening. I loved learning about my special Japanese carbon steel knife. Perhaps your grandparents knew how to do this, but it's sadly a rare art. An apprentice would be lucky to learn from him Juan does this by hand. His prices are reasonable and he come straight to you. It's the same price no matter the knifes dullness or size. I believe it was $12.50 per knife. He does it all in his van that is especially equipped. You'll learn more about the care of your knives. Just had nine knives sharpened by Juan and all are fantastic. Easy drop off and pick up at Chop Kitchen Supply and the price was great. This is the first time someone else has sharpened my knives as I usually do it myself on a ceramic hone but boy oh boy using Juan was some much better than me doing it myself. I had some original USA made Chicago Cutlery knives sharpened by Juan. While he's a nice guy, he wound up scratching the sides of the blades. Now, they look awful. He does poor work. read more

I had a very expensive Japanese chef knife that I had damaged resulting in 2 large pieces of the blade being chipped. Juan made a beautiful repair at a very reasonable price. I saw 'Juan Running with Scissors' working down the street in October, as I was going out to pick up my Dog .. I pulled over & asked if I could bring my knives or make an appt.. he said 'oh just bring them - I'll drop them off to your house. I went back & brought a few to him. He said 'that will be $50'. I I said 'well I have 3 twenties - do you have change? He said 'no, but I can drop it off on your porch with your knives. I said okay. When I got back my knives were on my porch as I had requested.. but no change. I later e'd him saying I was waiting for my change and I had more knives. Never heard from him. Really? read more
