In some groups of barbecuers, mopping your meat is an easy way to introduce moisture and additional flavor during the long slow process of barbecuing. It doesn't seem to be embraced by most Wichita pitmasters, though whatever break from tradition they feel this might cause is negated by just how good the resulting product ends up being. In a town that is riddled with mediocre barbecue, they could use it. The pulled pork was great. That little hunk of fat at the end of the slices of brisket wasn't quite as melty as Bite Me, but it was good enough. Sausage was as good as ever. What really put it over the top for me was the two non-traditional sides Big Daddy's offers - smoked portabella mushrooms and smoked stuffed jalapenos. The former comes soaked in the mop, and was a nice change of pace from the fats and starches that usually clog up the sides of a barbecue place. The cheese-stuffed, bacon-wrapped jalapenos, on the other hand, were an indulgence, homemade and executed just about as good as you can imagine. Spicy, fatty, and green. I don't know if it's fair to compare Big Daddy's to PIPO or When Pigs Fly, because that mop puts it into a category of its own, but it doesn't matter, because I would come back here to eat their 'que anytime.

Some are so popular they sell out, so make sure to check out their social media to see what days have which specials and go visit them! My favorite dog ever hands down is the Fearless Vampire Killer. I first had it at garlic fest and now when they have it on the menu I always try to stop by. It's garlic deliciousness. If you enjoy garlic you will love it too. The fresh herbs really set it off. It's just the most perfect combination of savory. Definitely, highly recommend trying this one. I always get a combo partly because I just love those potato chips also! They are at the ICT POP Up Park along with the WSU Food Truck Plaza frequently so make sure to check Facebook or Instagram because they always post their schedules along with daily posts of their location. And don't think this cold weather stops them either. So get out and support them! You can get your sandwich plain or with bell peppers or hot peppers or both. You can also get a small container of delicious beef broth for your sandwich, ask them to pour broth on your sandwich or have them dunk the whole darn sandwich in broth. Can you count on me being able to recognize an outstanding beef sandwich and write a good review of Chicago-style beef sandwiches? Yup, I grew up in Indiana, 30 minutes from downtown Chicago so I've eaten some darned good beef sandwiches. Though there are a number of restaurants in Wichita which sell some pretty good beef sandwiches, but NONE are as good as Big B's. Not only are the sandwiches fabulous, the Big B's folks are supper nice people.
