Eventually she is handed a waffle, though it's all she can do to stifle her frustration when she reads the name on the ticket, realizes she was accidentally handed someone else's order, and finds the proper recipient. Her father, after done perusing the other food trucks in the vicinity, stops by to make sure everything is okay. With utter disdain, she reveals she's been waiting for nearly Ten. Whole. Minutes. Nothing is made of it, and she is soon provided with her waffle. It is then I understand why "It's worth the wait!" is written among other encouraging statements in glass marker around the window of the man taking orders. Taking the cardinal rule of doing one thing and doing it really well, Waffle Wagon offers Belgian Liège waffles and nothing else. Fortunately, this is a novelty worth tracking down: this version of the popular breakfast food is turned into a confection by increasing the sugar content, culminating in tiny bits of pearl sugar that caramelize and provide an incredibly crispy exterior while the interior stays fluffy. It's a waffle that has the syrup built in. It was so sweet it gave me a stomachache after I powered through the whole thing. Waffle Wagon blurs the lines between food truck and carnival concession stand: it has no social media presence and given their extremely limited menu it's hard to imagine them finding an audience outside of tagging along with one of the other established food trucks, but they provide an opportunity to try something you're not otherwise going to find in Wichita, and they do it very well. Charge $9.95 for chicken and waffle in a paper dish and make a mint while making the patrons of Wichita deliriously happy!

During the three times I've visited Hawaii the number of times I went there for shave ice numbered in the double digits. I was excited to read about North Shore importing all of their equipment and syrups from Hawaii, thinking that the secret to great shave ice is authenticity. I've visited North Shore many times this summer, and what I've come to realize is that the secret to a great shave ice is in the technique, not the tools: specifically, the way the mountain of shaved ice is put into the cup. Watching videos of Waiola online, you can see they use their hands to guide the ice into the cup and lightly shape the top, but don't compress or pack it into the cup. I think this is the key to ensuring a fluffy texture to the ice. The amount of syrup used plays a part, too - you don't want a pool of syrup at the bottom of the cup, because it turns the last quarter of your shave ice into soup. The ice I've had at North Shore runs the gamut between fluffy and a little soupy or icy, depending on the kid doing the preparation. It can be spotty. I get that the North Shore is just a family business, operated by teenagers trying to do something productive over the summer and not focused on authenticity or losers like me who've spent more time than I care to admit researching what makes a good Hawaiian shave ice. When it's good, it's close enough to remind me of Waiola. I'm glad I can get sweetened condensed milk, too, though offering other traditional toppings like adzuki beans and lilikoi jelly would be going above and beyond (and probably wasteful, considering how few people around here knows what they are and are likely to order them). I come back to the North Shore whenever I'm on the north side, and I'd recommend going out of your way to do the same, if only to try something a little different. There's one more aspect to Hawaiian shave ice that North Shore can never duplicate - the fact that you're eating it in an island paradise - but at least a sugar high can help you feel better for a little while.
