We stayed in the hotel our only night in town. Its a lovely hotel with great staff. Only complaint was parking and unloading but that's a hotel review subject. The bar and restaurant are lovely and staff are great. I enjoyed watching the mixologists work. He was friendly and talented. We had small cooler we asked for ice and he was most generous. We only ate breakfast here but food for other meals looked interesting and we'll presented. Full disclosure i don't care for Irish or European breakfast. To me the bacon is raw and eggs under cooked. I dont eat baked beans or sausage ever and lets not speak of blood pudding. Im not trying to be ugly American... I struggle to get breakfast the way I like even at home. So neither of us were crazy happy with breakfast except croissant was fantastic. I got the porridge which was similar to oatmeal but not as much texture. Wish they had Splenda in Ireland . I basically don't like fruit so picked that out and the sprouts???. Tea was piping hot and strong. Hubby didnt ask for eggs to be cooked extra or bacon crispy... so he wasn't pleased. Great breakfast! The food was great. I had the pancakes and they were crisp and buttery on the outside, big and fluffy on the inside. Coffee was very good. The ambiance in here is so fun! We came here twice for drinks and once for food- while it looks fancy, service was great especially by the bartender. The food here was really good, the pizza was fantastic and a great shareable and the soup that day, the mushroom, was one of the best we had tried. Hyde had the best service of anywhere I went to during my holiday in Galway. They were kind and attentive and made a great experience overall. For food I had a great beef and potato dish and my wife got the roasted duck. Actually I thought the red pepper and tomato soup might have been the best because it was so good! I came here on a whim for lunch and it was some of the best food I've had while in Galway. The mushroom soup was to die for! I would consider myself a soup connoisseur, and this was one of the best mushroom soups I've ever had. The vegan salad was also excellent! I don't follow a vegan diet usually, but I felt like I needed some veggies and this was excellent. The roasted cauliflower, beets, sunflower seeds, and avocado added a lot of sustenance to this salad. My server was really nice and gave me great recommendations on what to order. Service was quick as well. The space is trendy with beautiful velvet seating and greenery inside for decoration. This would be a cute date night spot for anyone looking for a trendy place for a date. We came across this place as we were looking for someplace open later for dinner (they serve until 9:30). They were happy to seat us and take our order when we arrived at 9:15. Wonderful craft cocktails with local spirits and friendly wait staff. They even made us a dessert though the kitchen was officially closed, which was terrific as it was my wife's birthday. We arrived about 9:30PM. They stop serving dinner at 10:00 so we were afraid we might not get food. But they accommodated us nicely. The food was excellent and the service outstanding. Everyone was so friendly and made sure our meal was delivered quickly. The general manager, Barry, was super nice and visited with us about their gins. He introduced several different local gins to us, telling us about the makers and the different nuances of each of them. He also told us where we could buy some to bring home with us. He finished up with presenting our daughter-in-law with an "H" pin that all the employees wore that stood for Hyde, that also happened to be the first letter of her name, and gave all of us a USB/charger for our devices with their logo on it. All in all I highly recommend Hyde Gin Parlour for excellent service, good food and all the different gins to try. read more
