Chicken UMAMI Ramen
Anton F.

Have a craving for ramen, check out Hinodeya. Specializing in dashi based broth, the traditional umami flavor is delicious. As many other locations, the dining area is small. The waitstaff here is very attentive and reviewing a few items in the menu. One of my favorite orders are the spring rolls, chicken umami ramen, medium spice and a sapporo. The shishito peppers, Hinodeya house ramen and sake is also pretty good. There are 2 parking garages nearby and make sure you hit the drum on your way out, it's tradition.

Sophisticated and ramen elegantly well done! I came in here seeing that the place already looked like an artisanal ramen joint. And boy was I ever so right! I love scallops so I tried their seasonal Hokkaido Scallop Ramen and wow the soup was so flavorful with umami flavors and they topped it with fresh sashimi scallops! Def a seafood lovers adult style ramen! I hope this won't just be a seasonal dish it's amazing. You can tell the quality of this joint just by looking at its condiments. The spicy powder is finely ground and actually spicy and numbing so tread with caution. The garlic looked like walnuts which was a nice touch (: Ambience is giving modern zen. Super cute and modern with friendly and sweet staff. Def will be back, haven't been this excited about ramen in such a long time!

First time at Hinodeya Ramen Bar on a weekday. The restaurant is clean and the staff is nice. I ordered the special scallop ramen and it did not disappoint with its umami punch. The broth was rich and hearty. Ramen noodles were thick and chewy. The green onions and shallots also enhanced flavors. It was a great meal overall. I was happy with the $25 price tag. Only complaint is that 1 of the 5 scallops tasted a bit sour... others were fine though.

o2.o1.2o26 We went on a Sunday close to 1pm. There wasn't any wait but we waited a bit for them to put the tables together. I told the staff that we'll wait outside then. But they didn't come get us when the table was ready... I ordered the clam ramen bc they went out of the scallop one. The ramen is very different from the other places I had. It very bouncy and I like it. There were a lot of clams. I don't know what I was expecting but I feel like it wasn't as good as I thought it would be. The staffs were also cleaning and taking empty plates away while we were eating. They also took dirty napkins away which I said I was still using it. She said she'll get me a new one but never did... It was nice they gave crayons and print out drawings for the kids to play with.

Ordered take out for lunch and went with their spicy miso ramen. First off I was really impressed with the presentation for take out. The containers they used separated the ingredients in a way that ensured the bowl to be fresh and not in the least bit soggy. The noodles had a great bite to them and the broth was phenomenal; rich in umami and just enough spice to still be able to taste the other components. The chashu pork was delicious and there was a good amount of it. The bowl also came with soft boiled egg, bamboo shoots, green onions and seaweed. An extremely satisfying lunch. I look forward to eating in next time

The food is really good. The noodles are amazing--the best I've had since I came back from Japan. I got the house ramen, and it literally reminds me of a shop I randomly found in Kyoto at night. That place is a core memory for me. The service is amazing. Everyone was so respectful--it almost made me want to cry because it reminded me of the hospitality in Japan. I literally felt like I was transported there. There's seating for everyone, but the waiting area is really small.

Always in Little Tokyo and heard about this ramen spot that opened not too long ago. Was craving for ramen and decided to give this place a try. It hit the perfect spot for lunch. The broth flavor was very delicious and flavorful. It was a filling meal. Definitely a place to visit again. The service was quick and tentative. The inside was elegant and clean. It wasn't packed on a Saturday afternoon and was seated right away.

I believe I've reviewed Hinodeya before, but it deserves another. This place has fantastic ramen, great service, and is absolutely worth trying. They have authentic Ramen with very delicious broth. The dining room is nicely decorated. They have a generous rewards program that will get you a free dessert for signing up if you want to use the points during that visit. This is a must-try Ramen spot!

Came here with a group of friends on a Sunday at 8pm and there was no wait at all. It wasn't too crowded and the workers were very accommodating and quickly gave us waters and took our drink orders. The menu was pretty small and there weren't too many options. Regardless, I got the Sukiyaki Beef and I would rate it a 6/10. It was good, but not the best I've had. The meat was tender and I was intrigued to try their buckwheat noodles which were delicious. I would say though the soup was lacking in flavor and I had asked for mild but it wasn't honestly spicy to me at all. But maybe it could be my fault and that I should have gotten a medium spice. Anyways, the brussel sprouts were my favorite. They were so crispy and tasted almost like you were eating seaweed. I added the crunchy garlic with sesame that was provided at every table on top and it enhanced the whole dish. Overall, this was a great place for some convenient ramen if you are in the area. But I would say it wasn't my favorite place to go, but still somewhere I would stop by if I was in the area.

Decided to grab lunch in Little Tokyo. We ordered ramen, and it was delicious. The service was great as well. The atmosphere was modern and quiet, which I liked.

Littleneck clams hamaguri ramen on left, yuzu zen ramen on right
Steven M.

The ramen is absolutely amazing! Both the hamaguri and yuzu zen were super flavorful and light. The the clams added a great meaty briny flavor to the dashi broth that was complemented by the toasted sesame seeds. And the yuzu zen was citrusy with great balance coming from the toasted kale chips and sweetness from the inari. Service was very quick and helpful. And the whole atmosphere is relaxing and inviting. It might help that I came before any dinner rush

Yuzu Zen (Vegan)
Summy L.

Best vegan options! Creamy vegan is the best, the bean curd is sweet and delicious. Yuzu zen is citrusy and also delicious, especially if you're feeling under the weather. Staff is very friendly. Good amount of seating and the quiet atmosphere is appreciated.

Parking - I did street parking, there were a few parking structures but they were quite expensive. The service we got was great! There was only like 2 - 3 other parties when we arrived and they were super attentive and nice. I got the chicken gyoza, which was made in house. It was super good! They also have this fried garlic on the table. Which also complimented the gyoza very well. I got the beef don with the mini ramen so I could try both of it. I enjoyed it very much, although there really was nothing special. It kind of tasted like a particular fast food beef plate. Also the spicy ramen that I got was not spicy at all. Overall, It wasn't a meal to remember. I did enjoy the food but the service is definitely what made it for me!!

All the workers answered my questions and even as the dinner rush came in, I never felt like I was pressured to hurry up. Huge kudos to them for this. There are lots of places to get ramen in Little Tokyo and I have my go to places, but now that so many other ramen places are popping up in the 626, the daunting task of driving to DTLA and finding parking have also factored into my decision to wander out. But as a J-fashion and anime fan, I'm just constantly thrown back into the Little Tokyo vortex. For this recent visit, I remember my friend hyping up the Anaheim Rakkan Ramen, so I thought why not? Came a bit later into the dinner rush, around 6-something PM and was seated immediately as a solo diner on a Friday night. It started to get a bit busier around the time I was finishing up. Seating is a bit tight inside with a couple of tables, counter bar seating, but they do have outdoors seating as well. Food came out efficiently and super piping hot. For my dinner, I got the: 1) Coffee Jelly: -One of my favorite, comforting Japanese desserts. If a bakery has it, I'll order it, and I felt a bit indulgent so I ordered it then. Staff asked if I wanted to have it at the end or just have it come out ASAP. I said ASAP and it was a good palate cleanser between the savory and sweet so I didn't get tired of the flavor. Not a super huge amount of coffee jelly (but makes sense since this is a restaurant and not a to go ordering counter at a bakery), but it was silky and had a good coffee flavor to it. You get a small "shot" of heavy cream milk to mix in and you can control how sweet you want it. Not bad. 2) Ramen Sushi Combo (Spicy Quartz Ramen + Aburi Salmon): -This comes with any signature ramen and any 2 pieces of sushi (extra fee for any upgrades) -I got their spicy quartz ramen, which is their creamy miso broth ramen made with your choice of chicken or pork chashu (I got pork), crispy fried garlic, seasoned egg, fried broccolini, and 2 pieces of nori. -There's LOTS of crispy fried garlic pieces in it. Every bite has a slight garlic after taste and it's nice to add a bit of crunchy texture to the ramen. -The broccolini is unique, I don't think I've ever had that with a ramen before and it's nice to have some greens too. - It's a seasoned egg, not a soft boiled egg, so don't expect that. It's not hard boiled all the way, but the flavor wasn't super strong for the egg. Not bad, but not the best. -The noodles are thicker egg noodles that had a nice chew and texture to it. However, the broth flavor wasn't that strong to me? If that makes sense. You get a good taste of creamy miso and a very slight kick, but I felt like the 2 small pieces of chashu and noodles didn't really take the flavor of the broth that well. Maybe I should have left my bowl of ramen soaking longer to get a better taste profile? Who knows. 3) Aburi Salmon (2 pieces): -I chose this with my combo and it doesn't incur an extra free. It's a seared salmon with mayo on top. -Not bad. Can never go wrong with aburi salmon. It's comparable to what you can get from Kura. Maybe I ordered the wrong thing or maybe my taste buds have been blasted by ramen spots with heavier, flavor intensive broths like Tenkaippin and Nagi. I don't mind going if someone else invites me and hopefully it's a better experience.

I have a picture of my brother eating here in middle school with us and then later on in his early 20's. Crazy time lapse, and truly shows what a favorite this place is and it's place in the community. As with all businesses in Little Tokyo, parking can suck (not as bad as K-town, but you're either paying or super circling around). Service is super efficient, welcoming and polite, as with their other locations as well. It's not the biggest restaurant, but none of the Shinsengumis I've been to have been particularly large. With this location, from my first visit, and all the subsequent visits, I always get their Hakata ramen, firmer noodles, since the longer I eat and enjoy the food, they'll soften a bit, less soup oil and less saltiness. I get all of the toppings that it comes with and I always add in a poached egg. Love the strong pork flavor since they stew their broth for so long and the tenderness of the chashu (sometimes I order more). Prices have definitely gone up and a slightly altered upgraded version of this ramen is almost $30 if you're not careful enough. Times have changed but how good this place hasn't. There's more ramen options now than there were like 10 years ago, but Shinsengumi is always a classic.

The tonkotsu is not one of those rich, milky, creamy ones and I personally like these lighter ones more. I also enjoyed the shoyu which had a pleasant depth of flavor, but it felt like it was relying too heavily on MSG for umami. Noodles came out chewy. There was not anyone at the restaurant at the time, but people did start trickling in as more time elapsed. We got our food relatively quickly as well. FOOD: I ordered the spicy pork tsukemen ($23.45), which is their dipping noodle. The noodles are thicker than standard ramen, but in a good way! It comes with thick chashu (thick, fatty pork) slices and soft boiled eggs. If you haven't had tsukemen before, you essentially dip your noodles into the broth and then eat it that way. The broth is extremely flavorful and there are also pieces of chashu in it as well. The only critique that I have regarding this is the broth was lukewarm which made the dish taste slightly off. I've tried this dish at another branch and the broth was also lukewarm there, so I'm not sure if this is a location issue or a standard amongst all branches. Also, this dish does not really have any vegetables in this, but I also don't know if traditional tsukemen has veggies included. SERVICE: Service was quick and everyone was nice and doing their job. Didn't seem like the staff was slacking or messing around while there weren't many customers. They were very attentive to us, refilling our water immediately once they saw it was getting low, and being very attentive towards if we had any other concerns or if we needed anything else. PARKING: There technically is street parking but since it's in Little Tokyo, it's going to be very difficult to find it. There's $4-6 valet parking available nearby the location. There are a lot of people walking around though so just be safe. INTERIOR: It's not too big of a place but it's also not too small as well. It looks very well kept and clean. BATHROOM: Two gender neutral bathroom stalls that are both very clean and accessible. No issues here with them. TLDR: Overall, I thought the place was pretty good to eat at! I would definitely come back for the tsukemen (as long as the broth is warmed up until it's hot). A very good dish combined with great music (they have some great Japanese music variety) is definitely a spot worth coming to with friends !! :))
