Wow - very grateful to Prof Anjali Vats for the absolutely stellar "New British" cuisine recommendation of Higher Ground on Faulkner Street in the Faulkner House in Ancoats, Manchester. It was absolutely phenomenal and their tasting menu / five-course menu was mind-blowing, especially the final rhubarb ice cream - rhubarb also bring something Anjali has expertise on. So glad to also be able to introduce her to Prof John Haskell, Law Prof at The University of Manchester Law School and Director of the Manchester Law & Technology Initiative (LaTI) because Anjali was rounding out a visiting professor stint at Manchester Metropolitan University's School of Digital Arts.
Watching the chefs at work also reminded me of FX's The Bear because they were working their magic and harmonizing the chaos in a controlled grace, and could explain every little minute detail of the dishes and the ingredients that comprised them. I also saw several of them writing with marker on pieces of tape ingredients and meticulously cleaning the kitchen afterwards (just like the show). The food was out of this world: green pea fritters, many seasoned fresh vegetables straight from the farm, excellent braised meat, and not only the rhubarb ice cream but this pine cone ice cream dish that had an indescribably delicious flavor.
