Firstly it is a new, neat and clean and they feature local artists on the walls, so it was a pleasure to come in and sit down. Also full floor to ceiling windows, so really light and bright. I happened to like the art work, so the whole thing really worked for me. I ordered virtually every entree (well, 3 out of 7 or 8) because we were just grazing and chatting and also because the offers looked and sounded delicious and a little different. Started with Crispy Grana Padano balls with dressed leaves - the balls were small, but they gave you 6 and they were rich and super delicious. The Trio of house made dips were outstanding, I am not a big eggplant fan, so they substituted that with homous - I am a big homous fan, and it was definitely in the really good category. They also included a beetroot dip, which was fresh, textured and really delicious also and the third dip was an unusual dip made of pulverised rocket in a light and fresh oil with a sprinkling of cheese on top - a little different, interesting and my number 3 choice behind the Beetroot and Homous. It was served with wonderful lightly toasted bread which was also good. The really outstanding dish was the Zucchini Carpaccio - thinly sliced, excellent zucchini in a light oil with the most fantastic cashew butter and something else I don't remember on top - it was definitely worth coming back for. We also ordered the chips, which were a mix of super fresh sweet potato and regular potato with a crispy kale through it as well - loved this, not too greasy and done to perfection. They make their own ice cream, but only had one flavour left, so we shared a scoop of really good coconut ice cream, as well as a Lemoncello Tiramisu - outstanding, homemade Lemoncello made into a tiramisu - highly, highly recommend ! This is a really open, friendly family type restaurant. As well as meeting Dion the chef, we met his mum, dad, girlfriend and then Nonna and the autie and uncle came in as we were leaving. Mum, Dad and the girlfriend work there and were just so friendly, warm and inviting, we were hooked before meeting Dion and the rest of the relatives. Definitely a place to come back to. The main courses looked wonderful, including Duck - one of my favourites and a couple of pastas that sound really interesting. They also have a beef and fish dish and couple of desserts we still want to try. Highly recommend the food, service and atmosphere and they stay open all day, starting with breakfast.

The Panama is located on level three and is large. It is great to have a quiet cocktail or two at the bar and then wander over to the adjacent dining rooms afterwards (although the meals served in the bar area look great too). If you can, grab a table near one of the big windows. It can be fun to watch the activity on the street below or take in city views. The menu really does, to use an old cliche, offer something for everyone. Whether you're after Spanish "Jabon" or Zucchini flowers stuffed with cheese (although beware if blue cheese is not your thing), quail cigars, slow roasted lamb or wagyu beef, there will be plenty to tempt you at the Panama dining room. This place is ideal for dinner whatever the occasion, be it dinner with a group of close friends or even a special date.

It's hard to get a seat / table most of the times i have attended. Without a doubt if you are a wine enthusiast then this really is the place for you, most of the wines are European but hey, always good to mix it up a bit (being a margaret river man myself, it's good to experiment).

About 10 minutes after ordering entrees and drinks one of the waiters came over and told us we had to order our dinner as the kitchen closed at 8pm for deep cleaning. After rushing our orders the food arrived and it was just about edible. It also took 15 minutes and several reminders to get the drinks ordered. The restaurant was quiet so should not have taken that long. The staff were rude and the service poor. The restaurant was supposed to close at 10pm and they took last orders for drinks at 9.15 and the staff were walking around in their coats from 9.30. I will never visit this restaurant again.
