We decided to check it out. It's kind of a roadside stand with a drive through takeout, and some tables in a patio area. The menu includes a fair number of vegetarian options and some vegan ones too! And the staff were able to suggest a few changes to meet specific tastes. We ordered a black bean burger (with the zataar fries), a vegan breakfast burrito, and the chicken shawarma (which I didn't try). The portions were huge, the price was good, and it was so good. Absolutely delicious. This place appeared on a tv show; I'll have to go back and find the episode.

We ordered margaritas, the first round was very good but the second pretty much tasted like sour mix. I ordered the red chile stew and my friend ordered the spicy green chile BLAT. Fire. Don't walk--run…read more This isn't one of those "pretty good for a food truck" situations. This is the kind of burrito that resets your expectations a little. The chicharrón hits that perfect balance--crispy edges, tender chew, deep flavor that's been given time to actually develop instead of rushed out the window. It's rich without being greasy, bold without trying too hard. The tortilla holds its own--no blowouts, no soggy collapse halfway through like a rookie operation. Everything inside feels intentional. The heat is there, but it's not reckless; it builds, lingers, then lets you come back for the next bite without punishing you. You can tell this isn't just food--it's somebody's craft. There's a kind of quiet confidence in it. No gimmicks, no over-explaining. Just: here, eat this. And you do--and then you immediately start thinking about when you're coming back. If you're anywhere near Taos and you skip this, that's on you.
