They allow one group at a time into the shop for a fully curated Jamon Beurre experience. Yep, that is all you can get here. Ham sandwiches, but it's a much more involved experience than that. When you walk in, there is an entire wall with a cooler displaying every kind of ham possible. You have to pick whether you want cured or just baked ham. What region? They offer Italian, French, Spanish and then you have to narrow it down to the region! Then you do the same with the cheese. I ended up getting two sandwiches, the cured ham from Spain's basque country paired with Ossau-Iraty, or basque sheep milk cheese. My other sandwich was a French baked ham sandwich with comte. Which was the winner? I have to say, the cured meat from Spain was out of this world and in our taste test, was the top winner. I know, I shouldn't say that in France!

They do take groups one…read moreby one so the speed at which the line will move depends on how quickly those ahead of you decide. The service is friendly and personalized. The owner is a very kind Italian woman who is very knowledgeable about the meats and the cheeses. She makes sure that you end up with a pairing you are happy with! They serve jambon beurre sandwiches which is basically just ham and butter on a baguette. However, you can add cheese for 4.50 euro. The decision tree really is: 1) cured vs cooked ham 2) cheese or no cheese 3) cow vs sheep's cheese. My husband and I both went for the cooked ham since this one is more traditional in France. The cooked ham has different flavors out of which we got one with truffle ham and the other with Bergamont which is a citrus fruit. We both got cheese: the truffle ham was paired with a buttery and sweet cow's emmental, while the Bergamont we paired with a nutty and earthy sheep's Ossau-Iraty. Both pairings worked beautifully! The baguette was perfect. It had a substantial crust without being too hard and had a fluffy and moist inside. The quality of the products was evidently very high. There is no seating inside so we took ours to the Temple Square a few blocks away since it was a beautiful day! Highly recommend you try. Not sure I would use longer than 20 min out of a trip to line up for it so I suggest you come during off hours.

After all this experience, Tribolet is my go to butcher. First and foremost, the quality of the meat is excellent. I live down the street and see the daily delivery of whole carcasses. My husband is constantly saying things like, Where'd you get the lamb chops? They're fantastic! and This bacon is so gooooood! Secondly, they have a broad, comprehensive selection. Whole carcasses means that I can get the cut of meat for which I'm searching. Beef brisket for making corned beef? No problem! Wild game in season - rabbit, pig, pheasants, ducks, quail, etc. Charcuterie - poitrine fumée (bacon to Americans), boudin noir, saucisson sec, merguez, jamon, etc. Third, the service is patient, courteous and personable. I don't speak much French and they don't speak any English beyond chicken (I suppose due to all of the tourists who buy the poulet roti?), but even if it's painful and takes 3x as long, they'll patiently ask questions and pantomine until they understand what it is I'd like and how I'd like it. I also get complimented profusely for every new French word I use (talk about incentive!) I also appreciate that I can come in and tell them that I have no idea what to cook and they'll make suggestions of what to cook (often low cost options) AND give tips on how they'd prepare it. In other words, recipes! I've even gotten recommendations on what sides to serve. It's like taking a mini French cooking class. They're also quite skilled, so your meat is trimmed properly (no little bone chunks and enough fat for braising meats to really get tender). The fact that I can get really specific about how and how much I want something prepped saves me time in the kitchen. Finally, while some cuts are on the expensive side, some items can be cheaper than the lesser quality version at Monoprix. They also have a EUR4.80 roasted chicken that is just the right size for two people (quite small) with enough left over to make soup. That's the cheapest price I've seen for poulet roti on Montorgueil. Of special note: They stock specialty items for holidays - for example, turkeys & chapon at Christmas.

The North American section made me giggle. I grabbed some fancy French mustards and cookies to bring home for friends and family. Unsure if any locals actually come here or if it's ALL tourists. The layout was extremely confusing to me. Now, I'm sure there are some simply fantastic elements to this store that evaded me due to the sea of people inside. But, I think Erewhon had more going for it. Artistic, clean, bountiful displays of produce. More organization, better lighting, etc. I felt like I could actually see the products at Erewhon, whereas here I was fighting with a lot of noise.

My swan song from a disappointing trip in the bird department. Off the eye test, it doesn't get much better. The beautiful sight of tissi's rotating in front of a fire breathing oven, potatoes in the tray below collecting the chicken juices as they fell, had me ready to run around the Bastille plaza yelling "LE MOUVEMENT!!". I thought this was going to be my first high level bird in the City of Light. Much to my chagrin, the one I got was just lukewarm. I was ready for my fingerprints to be fully burned off. There was so much potential here, but as always, I have to judge what's in front of me. If I don't have my integrity I have nothing. It landed at an 8.1/10 on the restaurant scale which is good, but if it was hot it could have been up there with the greats in the rare 9 territory.
