This year, I decided to approach Michelin dining differently, focusing on the chef's vision rather than portion size, and Va et Vient delivered on every level. The standout here is the staff. The service was seamless and attentive, which is impressive given how many people were involved throughout the evening. The nine-course menu focused on the North Sea, with each dish beautifully presented and clearly tied to the theme. Each dish was delicious. My standout dishes were the rabbit, scallop, and haddock, as well as the blue cheese berry tartlet. As non-drinkers, we truly appreciated the sommelier creating a custom mocktail just for us.
