I love hot and spicy, so two of the flavors I got were "Sassy" (Sharp Cheddar with peppercorn and red pepper) and "Habanero" (Sharp White Cheddar with Habanero Peppers). Sassy was unexpectedly wonderful. Rather than hitting the tongue with heat, the heat was more in the back of the mouth and throat and lingered. No too much, but not too little either. Delicious. The Habanero on the other hand, exploded with heat from the initial bite. This one didn't hold back, it was full-on HOT! Way too often things that advertise Habanero try to be delicate... this cheese was not delicate in any way. It was HAWT!! And I'm a huge fan!! My third block is Blueberry White Cheddar.
