The dinner itself brings you on a real journey of flavors, and it is one that is never repeated twice. From the first light stop of a variation of bruschetta, that holds creamy textures and the real sweetness only homemade bread can bring, it glides you to a second course. Four to five bite-size appetizers are introduced to your palate in a manner that is akin to meeting new strangers. The variability of seafood, to the freshness of salads with seasonal combinations, to traditional tastes of Northern Italy, and the occasional heartiness of street food. We then move to our next stop, that of the one of the two main courses. Usually, as all stereotypes tend to say, a dish of pasta is served. However, there is a full range that is thoroughly explored. New landscapes of flavors are married, from saffron and blueberry to black garlic and cocoa, and many more. Yes, the traditional side is honored as well, from the chef's own region of Piedmont and its abundances in mountainous recipes and ingredients, alike the winter season that overtakes the North. To even a fully celebrated and homey wild boar ragù Bolognese, spaghetti alla Nerano, or to a pesto Genovese. It lingers on the buds, and it grows with a sense of warmth that provides a blossoming curiosity.

    horrible!! don't enroll in these courses!!…read more First, the seminars themselves are horrible -- total joke. You'll learn nothing and they're boring as hell. Second, this is a BAD company that does not earn goodwill. The whole pitch / brand of this joke of a company is that you can take a continuing ed course at one of these great resorts, so you get a mini-vacation while you take your course. That's why I signed up, even though it was SUPER expensive. I took 1/2 the course (in Palm Springs) because the company policy was that I could return within a year and finish it. Then COVID hit, and all the resorts were closed or were in locations like Whisler, Canada, which is shut off to travelers. So the whole point of these seminars was gone for 2020 -- you couldn't go to the resorts to do the continuing ed. Unlike every other business that did something nice (not charging cancellation fees, etc.), AEI REFUSED to give me an extension so that I could do the course in 2021, once the resorts open. I ended up talking to the owner and he complained that he would "lose all business" if he gave people an extension. First, that's stupid -- at most, he would lose the people like me who had taken 1/2 a course, he certainly would not lose the new customers -- but more importantly it's a horrible business practice. Makes me angry at the company and not want to give it any business at all. Then he offered me a $100 discount to pay again! Of course I'm not giving this company another $550 so that's ridiculous. Anyway, this whole thing is a scam and I urge you NOT to sign up!! They're horrible!!
