The pastor actually tasted more like chicken than pork also. They also initially forgot our cervezas and we had to ask for them. Yet on a positive note, the salsas are extremely spicy and delicious. But overall, this felt more like a tourist trap being right in the center of Guanajuato City rather than a serious taco place, so I'd seek out other options.

We knew about this taco cart from PBS celebrity chef Pati Jinich as part of her travels to SMA. We weren't aware that the full name of the business is Andy's Pastor Taco Cart even though Pati even talked about the pastor in the video clip. In fact, the prominent vertical spit was made of their specialty pastor made of thinly sliced pork shoulder. The differentiator is that it's marinated in a mixture of dried chiles (ancho, guajillo, chipotle), achiote paste, citrus juices (lime and pineapple), vinegar, and pronounced spices like cumin and oregano. Alas, we instead for a couple of the MX$35 Carne Asada Tacos (Photo 8). No question they were quite tasty but probably no better than any other popular taqueria in town.
