If you follow my reviews, then you know I'm a bit snobby when it comes to food...why eat if it…read moredoesn't taste good?? I'd rather be skinny. Having grown up in the crème de la crème of cities featuring wine and gourmet food, I don't mean to be critical, but a lot of restaurants just don't put any passion or care into the creation of their menu and cuisine. EXCEPT SIBARIS! It was my bday right before Covid and I wanted to find good food at a nice restaurant...I mean come on, who doesn't enjoy a lovely evening? SIBARIS is inside a small boutique hotel not far from the center of Córdoba, called the Windsor Hotel. We decided to rent the presidential suite because it was massive and affordable (couldn't believe that; we only had dinner reservations but made a weekend out of the experience.) Wine list--immaculate. Wine in Argentina in general has gone down the toilet. Look for a vintage 2016 when you can. Younger years are just nasty. Anyway, we chose a bottle of Luigi Bosca de Sangre Malbec and the waitstaff in the restaurant clearly have been trained well. They present the bottle, open, decant if you like, let you taste before the pour, etc. Ok, off to a really good start. And then the menu...I have gotten so friggin sick of going to every restaurant in Córdoba and the menus are literally identical. Sibaris has REAL CHEFS WHO KNOW WHAT THEY'RE ACTUALLY DOING. Wow I was so thrilled. It started with an amuse bouche....I've been coming to Argentina for 17 years, lived here for 2 and I have never been served an amuse bouche even in some of the nicest restaurants in Buenos Aires. This was a shocking and delightful experience. The chefs at this restaurant knew how to take available ingredients and import different ones to create dishes that were exquisite for both locals and ex-pats all the same. My gnocchi with wild mushroom appetizer was made by hand fresh and was the size of a main plate!!! Woohoo, leftovers. And then comes the filet mignon (lomo) with purée kabocha squash (they call it calabaza here). Now I wish I had photos to share. We were doted upon by attentive knowledgeable staff, and the food was the best quality I have yet to find in this entire city! They don't have outdoor eating, so unfortunately I have to wait to return to Sibaris until after Covid. But those of you who are daring to eat in a cozy upscale restaurant during an outbreak, DEFINITELY GO!!! Best food in town, and better than some of my favorite restaurants at home in CA.
