There's no wasabi, just soy and hot sauce and the selection of fish items is limited, leaning more towards fried shrimp and fried chicken sushi (never saw this before, but didn't try it). We tried the Japanese Plum fried rice, but found it sweet and rather odd. The tea was the best part of our meal. The hot green and jasmine teas were loose leaf teas, not bags, served steeping in teapots. Service was cheerful and friendly, but the servers are easily confused. First, we were brought the next table's ice water. Then, we got shrimp instead of salmon maki. The other diners seem to enjoy the food more than we did.

Definitely worth seeking out and definitely a recommend :-)

    So when you go out to dine for the first time in Aguascalientes, what do you eat? Sushi, of…read morecourse! Our Aguascalientes family said that for sushi, the best choice in town is Yatsuba. The chefs here were sent to G'jara for training. The training paid off because here-to-now, I've been pretty blasé about sushi, but I was highly impressed by Yotsuba. Against a backdrop of blacks and reds, service was stellar. We were seated on the patio. A note about homes and bldgs. in ultra modern Aguascalientes (elev. 6,300'), because most of the year the temperature is mild, places do not have heat, so you pretty much freeze in December wherever you go (in Dec. it is in the 50s/60s during the day [70 if you are lucky] and in the 30s at night) unless you are bundled up. I ordered fried rice with shrimp (arroz frito con camaron), gyoza and miso soup. Oh my God, this was the best fried rice ever. With tiny bits of chopped shrimp and topped w/ finely chopped scallion, this dish was perfectly salted and seasoned. Yum!! The dipping sauce that came with the gyoza was great, but I thought the amount of ginger in the gyoza was excessive. But that's only because of my general antipathy towards ginger, everybody else liked the little buggers. The broth in the miso soup was delicious, but I thought the soup was too busy, coming with mushrooms, tofu, seaweed and bean noodles. I sampled a couple of the sushi plates and they were delicious. Both came with bits of breaded cooked shrimp and a creamy topping. I didn't sample the ceviche with cucumber, octopus (pulpo) and clamato, but the others at the table loved it. The peso is slumping against the dollar (as of this writing it is 15 pesos to the dollar) so our meal seemed like a real bargain. Yotsuba is highly recommended.

    Ichiban indeed became 'the first' Japanese restaurant we ever visited in this lovely city, and it…read morehas since become our first choice in Japanese cuisine in Querétaro, and our point of comparison for all other Japanese eateries everywhere. Yes, it is that good. Everything on the menu is delicious: from the gyoza, tempura, and omusubi, all the way to the last pages that include the teriyaki bowls and makis, there is nothing that is not worth trying, and almost everything will make you want to order seconds. Here, the dishes that incorporate Unagui, or eel, are very special, and these alone merit a visit. With that characteristic sweet and savory flavor, the Unagui Especial roll is absolutely fantastic, and it can disappear with as much grace piece by piece as it's presentation on the plate. The Unagui Don is equally delicious, and might be a better choice if you are looking for something more filling, and are trying to not look like a complete glutton by ordering roll after roll of the Unagui Especial. The Nevado Especial roll is also a great and delicious choice, the Teriyaki Don is wonderful and delectable, and pretty much anything you order here is sure to be a delight to the palate. As a bonus, order a virgin Piña Colada for a sweet and refreshing drink that almost qualifies as a dessert. And so Ichiban remains as 'the first' in my list of Japanese comfort food. どうもありがとう!
