IJmuiden - New Castle by DFDS. Certainly not the most comfortable or cheapest way to go to Scotland. But if you want to use your own car it's the only way as far as I know.
Maybe our expectations were a bit high based on our previous trips to the south of England. We booked an inside cabin as it was the only option at the time on the KING SEAWAYS. (Six months ago.) If you don't mind sleeping in a oversized cupboard you'r ok. If not, you can upgrade to a "Commodore de Luxe" cabin. +£ 110,--. We didn't and survived anyway.
Also booked in advance a 2 course diner at The Steakhouse. Saved us £ 4,50 on a total of £ 100,-- that evening. Was it worth it? Not really. There were three kinds of sounds in the restaurant. The music played inside the restaurant, the music played nearby the restaurant and the noise from the engine-room. I preferred the last.
The service was ok. The steak arrived as ordered, medium-rear. It came on a hot plate. Really hot. By the time I lifted up my knife it was medium. I asked for a normal plate and if I hadn't lifted it while waiting it would have been well done. They offered to bring me a new steak but as my partner would have finished her salmon by then I told them it wasn't necessary. Next time the buffet?
If you are planning this trip it's best to read also what happened on our way back on the PRINCESS SEAWAYS.
